Hi Everyone,

The fruit flies are gathering to have a picnic with my bananas. Help!!!!!!!!!! Need your tried a true Banana Cake Recipe. Someone once mentioned Gram's Banana Cake but I did a search and came up empty. Any help with that one or your t&t appreciated. Thanks.

Here's mine:

The filling and topping on this is amazing!

Banana Cake

2/3 cup shortening
2 1/2 cup sifted cake flour
1 2/3 cup sugar
1 1/4 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 1/4 cup mashed, ripe bananas
2/3 cup buttermilk
2 eggs
2/3 cup chopped pecans
1 teaspoon vanilla

Stir shortening to soften. Sift in dry ingredients. Add bananas and vanilla with 1/2 of buttermilk; mix until flour is moist. Beat 2 minutes. Add remaining buttermilk and eggs. Beat 2 minutes. Stir in nuts. Bake at 350Â° for 35 minutes in two 9-inch cake pans. Cool 10 minutes. Remove from pans, cool completely. Fill and top with the following:

3/4 cup evaporated milk
3/4 cup sugar
2 egg yolks
3 tablespoon butter
3/4 cup chopped pecans
1/4 cup mashed bananas
1 teaspoon vanilla

In a saucepan combine sugar, milk, yolks and butter. Cook over medium heat about 10 to 14 minutes until thickened; stirring constantly. Add nuts, bananas and vanilla. Cool to spreading consistency; stirring occasionally.

Not cake, but a delicious moist banana loaf, I guarantee!!

SOUR CREAM BANANA BREAD
1 cup sugar
1/2 cup oil
2 eggs
1 cup mashed bananas (2 medium)
1/2 cup sour cream
1 teaspoon vanilla
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Preheat oven to 350F. Grease and flour bottom only of a 9 X 5 loaf pan. In large bowl, beat together sugar and oil. Add eggs, bananas, sour cream and vanilla, blend well. Lightly spoon flour into measuring cup, level off. Add flour, baking soda and salt, stir just until dry ingredients are moistened. Pour into prepared pan. Bake at 350F for 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. Remove from pan. Cool completely.

If I'm making the basic cake (white, yellow, chocolate, etc.) I always sift the powder mix first. I use applesauce instead of oil and I always add vanilla no matter what flavor cake I'm making. If I use the whole egg (I usually use the whites only), I beat the whites separately from the yolk before adding anything else. I've been told that my cakes have the texture of wedding cakes. Now as for variations I have added peanut butter and chocolate (a personal favorite) to a white cake, sour cream to a chocolate cake, strawberries to a white cake (omit water) and I am currently making pumpkin bars from a spice cake mix (which led me to your site because I was looking for a way to turn a white cake into a spice cake so I can double it). Use four eggs instead of three, add a can of pumpkin and a quarter of a cup of applesauce (or oil if you prefer), omit water. Bake as directed on the box.

Hi NancyLouise, I'll tell you, I have never owned the book. My best friend's mom did. I found the recipe back in the mid 90's and not writing it down at that moment, called her the next day and wrote it on the lp jacket of one of the records of my Bruce Springsteen 3 record boxed set. The 80's to 90's collection. :) My life was chaotic with lots of toys around, and it's the first bit of paper found at the moment I needed it. It stayed folded in another recipe book for years and then was lost in a move. While I love a regular Yankee Pot Roast, ohhh there's just somethin' different about the scent of this one. The cider, the vinegar, the mushrooms. Truly, it is a tried and true, never let you down, ta-da recipe. My Mom wasn't a great cook either - she didn't enjoy cooking. But she made perfect mashed potatoes and I loved it when she made french toast. When I got older she made pretty good white bean soup and veggie soup. My favorite meal was smoked pork chops, fried potatoes, and great northern beans all with ketchup. Mom's Mom is a great cook. She worked in restaurants and delis. She has lots of best recipes. Spaghetti and meatballs are my favorite. She served Thanksgiving Dinner with dressing in a casserole dish (we fought over the crusty edges), giblet gravy and rolled dumplings. She is known for her potato salad and cheese ball. Every Christmas she makes carrot cake, peanut butter balls and butter cookies rolled in pecans with a candied cherry in the center. For my birthday she always made my favorite German Chocolate cake. Dad's Mom's best recipe was Meatloaf and egg noodles in tomato gravy. She made very good cole slaw. She always had sweet tea and cream pies. I am lucky to have another grandmother to learn from. My husbands Mamaw taught me how to make cornbread in an iron skillet and peach cobbler. She also gave me the confidence to try cooking chuck roast, potatos and carrots. Her best recipe is her biscuits. Mom used to make popcorn for us before we owned a microwave and covered it in butter and salt. That was a best!

Another loaf. I make this one all the time. super duper easy.

STRAWBERRY - BANANA BREAD
2 eggs
1 c. mashed, ripe bananas (2 bananas)
3 tbsp. milk
2 (6 oz.) pkgs. strawberry muffin mix **I used Martha White 7 oz Strawberry
Cheesecake muffin mix
1 c. chopped walnuts **I used pecans
Preheat oven to 375 degrees. Grease 5 x 9 inch loaf pan. Beat eggs. Add
bananas, milk, muffin mix, and walnuts. Stir just until moistened. Pour
batter into prepared loaf pan. Bake 40 to 45 minutes or until bread tests
done. Cool bread in pan for 10 minutes. Remove to wire rack to cool.

These sound wonderful! I just put the bananas in the frig until I decide which recipe(s) to make. Thanks for the quick replies. I'll take as many t&t recipes that I can get. Keep em coming, and thanks. Hubby went crazy buying bananas and I have so many left.

How about a cheesecake? And you can also freeze the leftover bananas in their skins until you're ready to bake with them.
FRESH BANANA CHEESECAKE
Crust:
1 1/2 cups quick-cooking oats
1/2 cup pecans, finely chopped
1/2 cup packed brown sugar
5 TBL butter, melted

Filling:
Two 8 oz pkg cream cheese, softened
1 cup mashed ripe bananas
3/4 cup granulated sugar
2 tsp lemon juice
4 eggs

Topping:
1 cup sour cream
2 TBL granulated sugar
1 tsp vanilla
Banana slices for garnish

Preheat oven to 350Â°. Stir together the oats, pecans, brown sugar & butter until well combined. Press firmly into the bottom & up the sides of a 9" springform. Bake 18 minutes or until golden. Cool.

Beat together the cream cheese, bananas, 3/4 cups sugar & lemon juice until well blended. Add the eggs one at a time, beating well after each addition. Pour into the crust. Bake in the preheated oven for 40 minutes. While the cake is baking, prepare sour cream topping by mixing together the sour cream, 2 TBL sugar & vanilla until well blended. Remove the cheesecake from teh oven & top with the sour cream mixture. Return to the oven & bake 10 minutes more. Cool slightly. Loosen the cake from the sides of the pan & remove the springform. Cool the cake to room temperature. Refrigerate, covered overnight. Garnish w/banana slices before serving if desired.~~Another Taste of Aloha

sapphires, I don't even like bananas, I don't even eat banana bread, but I eat this cake. Ashley says it's her favorite, the best she's ever had and it is darned good. It was posted on the Cooking Forum by a former poster, J. Garner, who worked as a pastry chef.

Banana Cake (Rose Levy BerenbaumÂs Cordon Rose Cake)
Jgarner-Cooking Forum

(good as layer cake, elegant, delicate texture)
mix together:
sifted cake flour 2 cups
sugar 3/4 c + 2 Tbs
baking soda 1 tsp
baking powder 3/4 tsp
salt 1/2 tsp
puree together:
2 large ripe bananas 1 c
sour cream 2 Tbs or up to 1/2 c
2 large eggs 2
grated lemon zest 2 tsp
(I left this out since I don't like the flavor of lemon with banana)
vanilla 1-1/2 tsp
soften:
Butter 10 Tbs (5 oz)
Add butter and half of pureed mixture to dry ingredients in stand mixer and mix at medium with paddle for 1-1/2 minutes. Scrape bowl and add rest of banana mixture in two batches, mixing 20 seconds after each addition. Pour into 9"x2" round pan (I just lined the bottom with parchment, no spray or butter) and bake at 350 F for 30 to 40 minutes. Cool for 10 minutes in pan and then turn out onto rack to cool completely.
Hint: Use smallest amount of sour cream and 3 bananas for more pronounced banana flavor
Cream Cheese Icing
Cream cheese, softened 8 oz.
Butter, softened 5 TBS (2.5 oz)
Sour cream 1 Tbs
Vanilla extract 1/2 tsp.
Rum 1 Tbs
Powdered sugar 1 1/4 C (5 oz)
Process (yeah, the food processor) or beat cream cheese, butter, sour cream, and vanilla until smooth. Add powdered sugar and pulse until smooth. Makes enough to frost the top of a 9x13 sheet cake.

I used regular flour, because I never have cake flour, and it always comes out great.

How about Frosted Banana Bars. It is one of my families favorites.

Frosted Banana Bars

Â½ cup margarine, softened
2 cups sugar
3 eggs
1 Â½ cups bananas, mashed
2 cups flour
1 tsp. baking soda
1/8 tsp. salt
1 tsp. vanilla

In a mixing bowl, cream butter and sugar. Beat in eggs, bananas and vanilla. Combine the flour, baking soda and salt; add to creamed mixture and mix well.

Pour into a greased 15x10x1-baking pan.

Bake at 350 degrees for 25 minutes or until bars test done.

Frosting

Â½ cup margarine, softened
8 oz. cream cheese softened
4 cups powdered sugar
2 tsp. vanilla

Cream margarine and cream cheese in a mixing bowl. Gradually add powdered sugar and vanilla; beat well. Spread over cooled bars.

Enjoy!

This recipe is pure 1950s! But it really is wonderful.

My late Aunt Lil was a very fancy hostess and a very good cook. One of the family's favorites was her banana cake. When I asked my cousin for the recipe, to serve at our son's bar mitzvah, I was surprised to learn that the recipe for the cake itself was just the Settlement Cookbook banana cake recipe (doubled). My cousin uses Cool Whip for the frosting, but I don't like it, so I just whip real cream with a little vanilla and a little sugar.

I hope your family will enjoy it as much as ours does.

Aunt Lil's Famous Banana Cake

Cake:
1 c butter
2 1/2 c sugar
4 eggs
2 tsp soda
8 T sour cream
2 c banana pulp, mashed (3-5 ripe bananas)
3 c cake flour
1/2 t salt
2 t vanilla

Preheat oven to 350 F, a moderate oven. Cream butter and sugar, add eggs, very lightly beaten, and the soda, dissolved in the sour cream. Beat well, then add the bananas, flour, salt, and vanilla. Mix well. Bake in well-greased and floured 8" square or 9" tube pans for 35-45 min.

Then:

Cool and cut layers in half. Fill with vanilla pudding (I use instant, but you can make your favorite homemade recipe) and sliced bananas between layers. Frost with whipped cream and garnish with maraschino cherries (see what I mean about the 1950s?).

I made your wonderful cake too, and it was very good. My daughter wanted half to take home with her. This is a keeper as well, thank you very much.

BTW, while my granddaughter was over she wanted a mug of orange juice. I gave her some and she soon forgot about it and went off playing. Well it attracted those nasty fruit flies and eight of them drowned in it. I can't stand those things, I always scrub my fruits and veggies when I bring them home from the store. It amazed me that there were so many and I never can figure out WHY!

Thank you all, I have saved all the recipes given here and will try the others at another time.
