Sunflower seeds

Not sure where to post this but I am in the process of harvesting my sunflower seeds. I have some hanging to dry and some that already dried and I have removed from the plant. I found instructions online to roast them (after soaking in salt water) but this was for in the shell (soak in saltwater, let dry, then roast while still in the shell). I will do this for some to have for snacks.

I have purchased roasted shelled sunflower seeds before and that is what I would like to do with some of my seeds. My question is do I roast them, then shell them or do I shell them and then roast them? I like to have some already shelled to quickly add to salads or recipes.
