Comments (26)Costco chickens are brined (soaked in salty water or injected with same before cooking, i don't know which process they use) . That's why the end result is consistently "juicy". The liquid at the bottom of the container is more water than fat but it does seem to mix together and get gelatinous when cooled. The product's convenience and price are tempting but we stopped buying them when they had their episodes in our area of bacterial contamination and periodic undercooking in the stores. Comments (19)We normally have a quesadilla on Saturday night and popcorn later, but instead we attended our annual high school Alumni Banquet (just over 200 in attendance). It always includes what I call "old people food" and was catered by a local food market. There were 2 attendees from the 1936 80-year class. Our former principle attended- 97-years old, and science teacher - 88 (both live easy walking distance from the school). Menu: Chicken Fried Steak, Meat Loaf, Smoked Pork Mashed Potatoes, Hash Brown Casserole, Rice Pilaf Green Beans, Corn Fruit Salad, 7-Layer Salad Rolls & Butter ~~~~~~~~~~~~~~~~~~~~~ We wait for Colorado peaches in the summer, which are sold in a hotel parking lot once a week during peach season. Comments (25)Okay -- cooking for one. I just put all this in one skillet: 1 sautee onions, a little red pepper, some steamed cubed butternut squash, some soaked white beans, salt and when all was kind of done, threw some raw baby kale & sliced grape tomatoes on top and put the lid on. Meanwhile -- 3 eggs with a teeny bit of milk, turmeric powder & pepper, mixed up and on low fire a la scrambled. When it was cooked I put it on top of the skillet stuff and then put it all in a bowl and ate alone. It was just everything I had in the refrigerator. I wish I could practice on some company dish -- a real dish. I found this very good but would I serve it to anybody? I feel very challenged about cooking for friends and I have done it often....See More- 9 years ago
