Comments (21)I made a pot roast today, also baked cinnamon apples, rolls, and a chocolate/peanutbutter fudge dessert thing (it was a box kit). DH got home from work very early and walked in on me in the kitchen making his favorite meal... only to find out it was for someone else. I felt like he caught me cheating on him! I really did think I was going to get it delivered and back home and he'd never know what he was missing. I took the meal to a friend & family, their 3rd child was born a week ago (12/26, almost a Christmas baby). I gave them choices, and they voted the pot roast. Then I came home and made a potato cheese soup from a package and sandwiches, with the option of leftover sloppy joes. I'm lucky I'm not sleeping in the car tonight. Comments (22)Ate at the club, Glenda. I was even too tired to heat up the sweet potato fries so I had a dish of ditalini, shrimp salad. It was good. Will finish my sandwich tomorrow night. I'm so glad I have so many left overs in the fridge. I can pick and choose and don't have to cook. That 2$chuck is sounding good to me nanny and I don't drink that much. Comments (15)Yum! That looks delicious. We had our extended family get-together at my house yesterday, so the menu was (sorry, didn't take any photos): Appetizers: everyone brought something so we had a huge assortment--hot cheese dip, cold cheeses, shrimp cocktail, raisin bread, green onions wrapped with cream cheese and dried beef, etc Dinner was: Chicken breasts with a topping of cranberries, apples, onions, rosemary and brie; roasted herbed potatoes, corn, applesauce, rolls (and I totally forgot to put out the beautiful tomato and fresh mozzarella salad dd brought--darn--and it looked delicious--of course, she didn't notice my mistake until it was too late!) Dessert: Butterscotch peanut butter rice krispie treats, raspberry white chocolate cheesecake squares, assorted cupcakes. Not to mention, bowls of candy and cookies that I had stashed all over the house, and that were thoroughly enjoyed, from the looks of them when everyone left! Nice day--we had a good time. Comments (21)Tuna casserole is one of those dishes that requires NO recipe! Just ad lib - all you need is cooked pasta, tuna, seasonings, any veggies of your choice and a cream sauce. And some sort of topping - grated cheese, crushed saltines or potato chips, fried onions. Bake until hot and bubbly. This is my adult daughter's favorite dinner and she requests it specifically whenever she comes to visit. When she was little, I used to make it with a packaged macaroni and cheese (like Kraft or Velveeta) and add some sour cream. Quick, very easy and suited to a child's taste buds. Now I get a little more sophisticated and use rotini or spiral pasta (have also used shells and orecchiette), bechamel and real cheese. Sometimes I add mushrooms .And when making for her, always peas....but only canned peas :-)...See More- 9 years ago
