I made a Swiss chocolate cake today......don't get excited, it's a Duncan Hines mix! But I did make a butter icing from scratch so that should get me some brownie points. :)

I'm going to put a meatloaf in the oven, with salsa and black beans in the meat loaf. Should be different.

Mashed sweet and yellow potatoes as a side. And finish up the Greek Salad that we love, and always grows.

Something with chicken thighs....probably Tuscan Chicken using Rachel Ray's recipe.....and some broccoli and cauliflower. And some rice, I think.

Pumpkin soup with Italian sausage and mushrooms, crusty Italian bread and a small salad. Yum!

Your meatloaf sounds interesting...lol..I'd probably do the beans and salsa as a side with rice..
I do love mashed taters..

Sounds good Carol, I only like to use thighs in well flavored recipes..not so keen on their meat flavor.

I have been working around the kitchen today, made the two big batches of refrigerator roll dough and made room in the refrigerator for them. Supper is simple, tuna patties, home canned green beans with bacon and onion, and macaroni and cheese.

I have been busy in the kitchen today too.

I have 3 cookie doughs in the fridge, one batch of vanilla bean marshmallows done, 2 recipes worth of browned butter in the freezer for 2 more batches of cookie dough. AnnT's Maple Fudge on the stove cooling a bit before I break off my arm beating it. Lol

I made English Muffins today too.

I will bake off the Chocolate Chip Cookies to keep the Guys out of my other cookies. ;)

Some of the cookies won't be baked until later in the week.

One more batch of Marshmallows to make..toasted coconut to cover those earlier too.

Mary, easy is nice now and then..That would not fly for dinner here...

Kian just feed everyone (but Kellan) double smash burgers..I had mine on a toasted english muffin.

So that should hold us all until 6 or 7.. til dinner.

Today my sisters and a lot of our families had our Christmas lunch at the Home where my special needs sister lives. We only buy presents for her, the honored guest. Not as many came because we had snow and ice storms yesterday, last night. It's so nice to be able to celebrate this way.

So tonight, I'm having a few leftovers from there.....a coney ( no bread), cracker dressing, and one of the desserts from there. And of course, I have my warm memories of today.

I never thought of putting beans and salsa in meatloaf, so I'll let you know how it turns out! LOL

Finishing off the Tuscan bean stew that I took for an international potluck yesterday.

Had Italian sausage, northern beans, diced canned tomatoes, with fresh spinach tossed in at the end. Great seanoings and so good and easy.

My 2 DGD are here and I thought I fix Quiche. I remember one time DD saying they would eat it as long as you called it egg pie not quiche. So i asked the 4 y/o if she would like egg pie for dinner. She gave me a funny look and said, "You mean quiche?" DD and I both rolled our eyes and tried very hard not to laugh.

So, quiche it is.

I've been busy, too. I had dough for candy cane cookies in the fridge from last weekend when we got started on cookies, so I worked on those. It's starting to dry out a little, and the red was already dry so I ended up only doing the red, rolled them out on my granite slab and cut with a pizza cutter, and just transferred the "sticks" to the cookie sheets and "crooked" them. Maybe tomorrow I will have enough energy left to do the white half of the dough. I made a double batch of each color. I should have made singles! But I figured on sharing with the kids.

I also had dough made for kolachki cookies so made red raspberry and nut filled.

I am whooped. DH surprised me and made his version of Sloppy Joe's. As he doesn't cook (not can't, doesn't!) it was a nice treat!

The rest of the evening will be spent in my chair being lazy. I have his lunch and breakfast made and in the fridge ready to go for morning.

Well he did season "his" ribs and put them on the grill. I say his, because he will eat most of the rack. Lol

I have just about petered out with energy too..

But must keep moving..haven't baked a cookie yet..

I have the muffins toasted for hubbies breakfast sandwiches..just need to fry up the sausage patties and make eggs..

Jasdip I love to stuff my meatloafs I usually use diced roma tomatoes, fresh mushrooms, sweet onion, and grated cheese it's fantastic but not your typical meatloaf.

I have the Aroma cooker loaded up with homemade chili. I thought it would be appropriate for this cool weather.

Just a bowl of Manhattan clam chowder for me. I'm busy making cookies for the freezer. Will bake when I need them. I'm planning a coffee for about 45 ladies the Monday after Christmas so I'm getting a head start on my baking.

I just put a chicken in the oven. I'm going to roast some veggies on high heat when I take it out to rest. Slices of acorn squash, brussel sprouts, onions, and carrots tossed with a little oil and balsamic.

We just finished and the little meatloaves were good!!!
I put a big dent in the meatloaves (baked in a muffin tin for speedy baking), put the salsa in the pocket and topped with some shredded cheese. Very tasty.

Now what to do with the leftover canned/rinsed black beans??? Ideas please.

Baked chicken thighs, roasted cabbage, and roasted carrots. Trying to get rid of stuff in the refrigerator and the freezer.

I now have Gingerbread dough, cinnamon swirl cookie rolls and CC cookie dough chilling for later baking. Just pulled out the browned butters for Maple Cookies and a Bourbon, Browned Butter Vanilla Bean Shortbread.

Got sausage patties browning for the weeks breakfast sands.

Jas, now that sounds yummy..black beans warmed through with salsa or a can of Rotel and served over rice..or with cubed roasted sweet potaotes in burritos..

Walnutcreek...we love cabbage pretty much any way.

going to admit (sodium is crazy) we had m.callander pot pies....we both have colds, dh must have shoveled or blew about a ton of snow, so it was comfort food...

We are having Zuppa Toscana ala Olive Garden and some homemade bread for it... Smells yummy!!

Terri, the quiche was great. The 4 y/o helped. We used mushrooms, spinach, bacon, ham and tomatoes. I used The Pioneer Woman's Perfect Pie Crust recipe. It is excellent. The texture reminds me of shortbread. Sometime when I'm making a sweet pie I think I'll add just a little sugar to it. Everyone eats all the crust with this recipe.

Susan, Pot Pies are indeed comfort food, and Marie Callander, well that's quick and good.

Laura, one of my very favorite soups..I make a batch and eat on it for a week of lunches. Kamren will have one bowl...the others won't touch it.

Well I have some mac n cheese in the oven, and fried rice in a skillet. And salad.

The Bourbon, Brown Butter Vanilla Bean Shortbread is now in logs in the fridge too.

One more cookie dough to make..and one more marshmallow..but other than baking off some CC cookies for lunch boxes..I'm done...for tonight..

Oh and I started laundry too..one more load of 3 to get in the wash.

I think I will sleep well tonight..might not even make it through Survivor.

Terri, The last time M cooked, other than an occasional helping hand, was when I was down in bed so sick I could barely make it to the bathroom, let alone to the kitchen several years ago.

He made Sloppy Joe's. He chopped up some celery and onion and cooked that, then browned the ground beef and added some tomato soup, oregano, and mushrooms. It was quite good, though not my Sloppies. I'll gladly let him do it again!

Tami, I understand that..Big D doesn't do much in the kitchen either..used to never...now he does grill quite a bit..but. I do prep, sides and clean up.. ;)

LOL Terri, be glad he does that much cooking! My DH grills when we are in the RV only if my knees are giving me fits. He will make a salad, and maybe nuke some veggies, but that's it. If I am not here to make a meal for him, he will go out, or mayyyyyybe make a pb&j sandwich.

He also emptied the dishwasher and loaded it on Saturday morning. Hmmm, wonder what's up? Saturday was a pretty good day for me this weekend.
