We took DH's mom out for lunch to her favorite place. I had alfredo sauce with chicken and noodles. It was pretty good. She had sweet and sour pork.

Hi Rhizo. No Mother's Day celebrations here either. It was a gorgeous day today!

Patti posted a slow-cooker beef stew in one of her recipe threads and I made it today. We had it with mashed potatoes (I don't like potatoes in the slow cooker.) Brownies and applesauce for dessert.

We had surprisingly tender chuck steak, corn, and potato salad. I made Pioneer Woman's onion bleau cheese sauce. It was delicious.

It's been beautiful today. I've heard from all three of my kids, but we don't do anything for the day.

I made a bulgar casserole today. Made it w/ground turkey instead of beef. I also cooked cranberry beans, so had some of each for my meal.

I made farfalle pasta with, sauteed chicken, mushrooms, asparagus, red peppers and yellow squash. Strawberries and cream for dessert.

Howdy, jasdip....beautiful day here, too. You know, I don't even have a slow cooker. It's not been on my list of something I need. So far, that is. I have seen lots of delicious sounding recipes, though.

Pam, I buy less expensive cuts of beef all the time. They can be tender and delicious and are my preferred option for several different dishes. Your meal sounds like a summer cook-out.

Shirley, I've totally jumped on the bulgar bandwagon. I really like it cold, with a tangy dressing. It's so flavorful in a hot dish with chopped vegetables and meat. I like chicken. Can you share your recipe? I have some ground turkey in the freezer.

Beef and Bulgur Casserole
1 lb lean ground beef
Some chopped onion, some chopped bell pepper
ü c dried onion
1 - 14 oz can of beef broth (low sodium if possible)
1 tsp minced garlic
ý c uncooked bulgur
1 tsp dried parsley
ü tsp salt
ý tsp dried oregano
â tsp pepper
ü c grated FF or soy parmesan cheese

Heat oven to 375 degrees. Cook ground beef, onion and sweet peppers in 10" skillet, stirring frequently, until beef is brown; drain. Put all ingredients into ungreased 2.5 quart casserole. Cover and bake about 45 minutes or until bulgur is tender. Stir in cheese. Sprinkle with fresh parsley if desired. Serves 4

Forgot to add that if I use ground turkey, I use chicken broth.

I have been treated like a Queen all day. So I didn't cook anything all day. Molly made sausage & homemade waffles for brunch. Tony grilled steaks and made baked potatoes the old fashion way in the oven. We also had a big salad with all the trimmings. I enjoyed dinner very much. Now the kids are cleaning up the kitchen....

Today around one we had our dinner at Amber and Mike's. All of our children and grandchildren were there. We bought 3 pizzas from Pizza Hut and I baked a pasta bake and we had a big salad, plus bread sticks, strawberries, cottage cheese and a big white birthday cake and a chocolate Mother's Day cake. I received several plants and a fish aquarium with a pump, filter and light. It is not a big one, just about the size for a Beta. We came here later and the men worked on setting in the base for my new chicken house they are building. Sat out in the yard watching chickens and watching the men work. It was a great day.

Out to dinner with DH and my two daughters. At this Italian restaurant they go around with appetizers, such as cheese, dried salami, bruschetta. We ordered a coconut shrimp appetizer to share.

I had the planko baby lamb chops and whipped potatoes. Tartufo for dessert. DH had a veal and eggplant dish, one daughter had a cold lobster salad, the other had ravioli in a sage butter sauce. (They were the size of pancakes! They shared two pieces of Italian cheesecake.

All in all delicious, but the service was not good tonight. We have been there on other holidays so we were surprised at the lack of attention.

Just finished potato salad and bbq ribs..

I too got to spend time with all of my children..son and DIL came up Friday night and stayed through noon today.

BD did the ribs and I did the spud salad..

Oh and the weather here..aaahmazing!

We had friends visiting this weekend, so a made a dish that I came up with a couple of weeks ago that I called Jamaican Jambalaya for them. Partly the goal was to follow the recipe I wrote down to see whether it "works".

The guests simply loved the dish. I've edited the recipe over on the cooking forum to reflect the changes I made for this second iteration of making this dish.

Rhizo would you mind sharing your lasagna recipe.?would love to use a white sauce instead of the usual tomato.

Sue, what a fun day! I love chickens. I had a friend some time ago who had several, one of whom (Martha) loved him to pieces. She would come roaring across the yard whenever she saw him, wanting to cuddle and be carried around.

Ooh, ellendi! That's my kind of place! The food, I mean. Too bad about the rotten service, what a shame.

Terri, I'm happy that you had all of your family this weekend. I love good ribs! I've got some in the freezer that I'll probably fix this week.
