We had a late brunch so we are having salads tonight, he is having a Cobb salad and I am having a small salad with boiled shrimp on it.

We are having cajun style red beans & rice with kielbasa sausage. I love my crock my crockpot...

We're having steak, green beans and sautéed spinach.

Another rice and red beans here....just a boxed version. It wasn't too bad. Added a slice of meatloaf and some mac n cheese that I had frozen.

Sun finally came out here in Ohio today. Very windy and not very warm, but the sun made it look perfect, such a welcome sight.

Right now, I have in the oven, the broccoli casserole that ellendi posted the other day!

A few adjustments....I didn't have the cheese specified, so I subbed a combo of provolone and cheddar.

I didn't add the eggs directly to the hot steamed broccoli....I thought it would cook the eggs.

I melted the butter in a coffee cup in the microwave, so I didn't have room to add the cheese to the butter/flour mixture, so I added the cheese to the hot broccoli.

I put half of the butter/flour in with the broccoli/onion/cheese, and then cracked the eggs into the coffee cup to lightly beat them.

Added pepper and freshly grated nutmeg and stirred the egg mixture into the rest.

Topped with bread crumbs just like she said :)

Baking at 350 instead of 330...I'm gonna guess she meant 350?

Can't wait to taste it!!!

We had beef stroganoff and apple pie.

Jean, hope you like it! Actually the recipe said 325 and I upped it to 330.
I had a garden salad, Dr. Prager spinach patty on a flaxseed whole wheat flatbread. DH had loaded potato soup.

Gadgets, what brand did you use? We like the Goya rice and beans.

There was another potluck at the hunt club. There were many different types of sandwiches, and salads, an egg and potato frittata, cold cooked salmon, steamed asparagus. I made and brought my own recipe for Cold Cucumber Yogurt Soup.

I made a salad with apples, celery, dried apricots, pecans and poppy seed dressing to serve aside leftover turkey breast. Costco had Magnum double caramel ice cream bars in stock this week so we had one for dessert.

Ellendi: It wasn't a name brand. It's distributed by Aldi's. (Rice Bowl.... New Orleans style.)

Oh my.....dinner sounds great! Lots of rice and beans tonight; I had them the other night with pork chops and they were so good. Good as leftovers, too.

Bob, those hunt club potlucks you have sound fabulous.

KFC and a huge Mountain Dew over ice.

made mini meatloafs...instead on one big one, actually measured the mixture out in 1 cupfulls...it made 6 minis, so we each had one and froze the rest..only thing no leftovers, lol...

The broccoli casserole was a huge hit! YUMMMMMMMMMY!

I checked back hoping to see your update Jean! Funny how I have never thought to change up the cheese.

Last night was the first grilling night for us this year. Cheeseburgers, potato salad and German cucumber salad. Didn't care much for the German cucumber salad, won't make that again.

The potlucks are a lot of fun. They also have "tailgates" after many of the hunts (which are November through March) and evening picnics through the summer. I've earned a reputation with the group as a good cook, such that several members ask what I've brought so they are sure to try it before filling up on other dishes.
