What's for Supper/or Dinner (whichever you call it)

I have a bunch of Chicken Tenders...boneless skinless.

I want to fix it with green chiles, salsa and montery jack cheese...

But don't know what to put with it.

Was wondering if Linguini with just olive oil would go good with it....

What do you think...

Don't care if it is something fancy Just want something that will taste good with it.

Beef roast. That is as far as I have gotten. It is in the oven smelling GOOD!

I am having chicken breasts on the grill.

Patti, I would make yellow rice to go with your chicken. Your chicken sounds like it's going to be more interesting than mine!

Every great once in awhile, I get the yen for a really *good* cheeseburger. Somehow, those from even nicer restaurants simply aren't as good to us as those I make at home. I combine a fatty ground meat with a leaner ground meat - it's my opinion that the greasier the burger, the better it tastes but my arteries might complain so I try to compromise *LOL* I chop up some yellow onion, some garlic powder, some Tony's seasoning, some buckeroo marinade sauce and a bit of cooking oatmeal. Freshly ground pepper, and mix it up without overworking the meat. I don't know why, but it sometimes just tastes so much better! I don't want a burger often, but when I do, I do. That, some baked beans, a "busy" salad ;) and a good movie while we eat - my husband is off work tomorrow for a 3 day weekend so we are going to be lazy tonight - we are putting in two trees tomorrow so we must reserve our strength - at least that's what we are telling ourselves *LOL*

I went to a birthday party for my three grandsons who turned 2, 4 and 6 with birth dates of 5/31, 6/2 and 6/4. My daughter had hot dogs and chicken tenders on the grill, home made potato salad, home made mac and cheese, tortolleni salad, veggie tray and cake. Im so full. It was fun but there were 30 children and 20+ adults. I was glad to get home.

Okay -- cooking for one. I just put all this in one skillet: 1 sautee onions, a little red pepper, some steamed cubed butternut squash, some soaked white beans, salt and when all was kind of done, threw some raw baby kale & sliced grape tomatoes on top and put the lid on. Meanwhile -- 3 eggs with a teeny bit of milk, turmeric powder & pepper, mixed up and on low fire a la scrambled. When it was cooked I put it on top of the skillet stuff and then put it all in a bowl and ate alone. It was just everything I had in the refrigerator. I wish I could practice on some company dish -- a real dish. I found this very good but would I serve it to anybody? I feel very challenged about cooking for friends and I have done it often.

We had a family birthday party (3 B'days, including mine) at a local BBQ place. Ribs, brisket, sausages, cole slaw, mac and cheese and beans. And appropriate accompaniments (beer, white bread, sauces, etc.). And a chocolate birthday cake!! It was wonderful!!

Something with pinto beans, salsa, unbreaded boneless chicken strips, chili powder, corn, FF shredded cheese and I dunno what else is in it in a whole wheat tortilla. Topped possibly with lettuce,tomato FF sour cream??

We had fruit with low fat cream cheese dip. Fresh pineapple, strawberries, cantalope, watermelon, bananas and Gala apples. It's been so hot here and it tasted really good! And I'm stuffed!

We will have the ususal this time, homemade crust (Thick and breadsy) with pepperoni and peppers and onions.

Yum, Patti. I'd just bread the chicken fingers, saute or bake them plain and add some garlic and basil to the linguini in the olive oil. Boy, that sounds good.

I made manicotti today. Haven't done it for years but found a recipe with Italian sausage, ricotta, parmesan and mazzarella. It was acutally kind of fun and really easy. Bought the sauce. Getting ready to go in the oven now. Also heating some Texas toast and having fresh strawberries and ice cream on pound cake (Sara Lee).

Hey, I'm making something similar right now. Boneless skinless chicken in canned green chiles and tomatoes, another can of chopped tomatoes, Spanish rice from a premade mix bag and black beans. No cheese, I'm trying to cook healthier.

Sure do go through a lot of garlic in this house :)

Watermelon for dessert.

Okay this is how I fixed it....

I cooked the linguini, put olive oil on it
Put in on the plate with strips of chicken over it.
Put green chiles (chopped) on top
Then salsa
black beans
and Montery Jack cheese (grated) over the top

It was a hit at our house...

I'm going to have to copy and print and save it in my cook book...because we want it again.

Was DS#3's 31 b'day tonight, so made one of his favorites --shrimp (got Gulf shrimp 21-26 @ 5.99/lb. WOO-HOOO!!) w/ garlic/diced tomatoes/parsley/feta cheeese etc. over rice. MMMM!
