I'm Working on Supper, Are You?

I just got through cleaning some fresh green beans for our supper. I have to cook them and plan to have chicken fixed in the oven, baked potaotes, radishes from the garden, and banana pudding. Do you know what you are planning on having? I like reading what kinds of food all you great cooks fix.

No idea yet. Maybe chicken fajitas? Yeah, that's it.
Right now I'm just waiting for Scott to leave for golf so I can dig into the crab legs I brought for lunch. I'm not sharing! LOL

Congratulations on the successful transition! It's not easy, but it can be done. Just need to readjust your standards for a while. Now that I'm an empty nester, I cannot imagine how I did it when I had kids at home and worked FT.

Call another contractor. That one clearly isn't interested in anything but a quick sell and run, as you surmised. Yes, a manual J should be done. That will reveal how big the unit should be. Once that is know, the HVAC person can determine if the existing ducts are adequate or not. He should also evaluate their condition. Your plan to replace the undoubtedly leaky jalousie windows in the future should be considered carefully. That and some other possible upgrades should tighten the house considerably, which means the heat load in a few years will be less than it is today. That will impact the sizing equation. Because of this you may be a candidate for a 2 stage system. Unfortunately, they cost more than a plain vanilla single stage system, but you really don't want to be oversized in a humid climate like Florida. In any event, get another contractor or two in there.

Baked chicken thighs. A nice Gardenwebber on "Cooking" just gave me the recipe. I said I wanted a "no skin" recipe to make it healthier, but in the end I caved and left the skin on.

Well, sort of...I just took 2 loin pork chops out to defrost. I'll brown them off and finish cooking in the oven. Shortly before they are done, I think I'll put some BBQ sauce on them, and serve with some potato salad I have in the fridge and maybe some peas. Dottie

Every great once in awhile, I get the yen for a really *good* cheeseburger. Somehow, those from even nicer restaurants simply aren't as good to us as those I make at home.
I combine a fatty ground meat with a leaner ground meat - it's my opinion that the greasier the burger, the better it tastes but my arteries might complain so I try to compromise *LOL*

I chop up some yellow onion, some garlic powder, some Tony's seasoning, some buckeroo marinade sauce and a bit of cooking oatmeal. Freshly ground pepper, and mix it up without overworking the meat.

I don't know why, but it sometimes just tastes so much better! I don't want a burger often, but when I do, I do.

That, some baked beans, a "busy" salad ;) and a good movie while we eat - my husband is off work tomorrow for a 3 day weekend so we are going to be lazy tonight - we are putting in two trees tomorrow so we must reserve our strength - at least that's what we are telling ourselves *LOL*

DH always asked me what I want for dinner but so far he hasn't called. I know he wants to go to Lowe tonight so I'm thinking we might be eating out.

Haven't started anything. At the moment, I've got the oven running on it's cleaning cycle, so won't be going into the kitchen until at least 6 o'clock, I guess.

Anyway, am on my own, at the country house, so I get to have a 'fun' dinner--stuff I like that DH won't eat. Picked up some baked lima beans at the Amish market, and bought some Jersey asparagus at a roadside stand. I baked today for the weekend, so I'll have a slice of fresh pumpernickel bread with those things. YUM!

Tomorrow I'll make a real dinner, since DH will be heading here, and will have a long, hectic drive after he leaves work. I'm planning on creamed dried beef (on my fresh pumpernickel), redskin potato salad (from the Amish market), fresh salad from the garden, and dirt pudding for dessert (also from the Amish)

I've got to cook those remaining 2 steaks but haven't decided how just yet.LOL I still leaning toward Fajitas with bell pepper and onion. We had lunch late,Frito pie,so food isn't the first thing on my mind at the moment.
I may just go have dinner with Sue or Mylab.:)

That's the wonderful thing about a crockpot. :) Trying a new recipe for pot roast. Also making popover rolls/biscuits.

I made Sharons dressing that she has posted here a few times so we are having salad made from greens I grew in my garden and Porkchops cooked in the crockpot with onion and garlic...spinach sauteed with garlic and mashed potatoes ..I have some pinto's I cooked yesterday so I might just have some of those too..
