What does your Easter menu look like so far?

I'm still waffling, as usual. Elery is going to smoke a fresh ham, we just bought a pig from a neighbor. Actually it's a half ham, and it weighs 12 pounds, so it goes into the smoker tomorrow. We're having dinner on Saturday, as we were getting conflicts with church services and other family dinners. Double bonus is that the weather should be great for Egg Hunting!

Anyway, here's my tentative menu:

Appetizers:

Cheese ball for Dave, it's gotta happen, family tradition

Roasted Red Pepper Hummus with fresh veggies

Devilled eggs

Sliced cheese with crackers

As much Easter candy as we can sneak from the kids

Dinner::

Ham, freshly cured and smoked

Pineapple sauce for the ham

Cauliflower and Broccoli Salad with Bacon

Baked Beans (because Bud and I both love them)

Potatoes to be determined....

Homemade rolls, also to be determined

Gluten Free Brioche from Nancync's recipe

Dessert:

Gluten Free Blueberry Crisp

Coconut Cake with Coconut Buttercream Frosting

Raspberry/Coconut Macaroons

More Easter Candy


I originally planned to add a chocolate cream pie, but there will be 11 of us and with all the candy hanging around, I think it'll be too much. I'm still undecided about potatoes too, I was thinking those "stacks", but they are time consuming and fiddly, and I don't think I want to do the last minute thing while trying to hide Easter Eggs, play with the kids and get the rest of the meal. Three family members don't eat mashed potatoes so maybe scalloped? Or twice baked.....

Yes, I do this every year. I plan a menu for a couple of weeks and never really decide until the last minute.

So what's on your menu? Can I borrow any ideas? (grin)
