We will be in Arizona where it’s nice and warm so BBQ it
will be. As a family we decided a few years ago that the traditional holiday
dinners didn’t work for us. No one like’s turkey, ham or stuffing so we
just do whatever sounds good at the
time. Sunday will be ribeye, baked potatoes and fruit salad. We usually have
cookies or maybe a cake. I have Easter candy for the little ones although they
don’t really care for candy that much. Maybe deviled eggs if any survive the
hunt. As long as we are together that’s all that counts.

I don’t have any ideas for you but my mother and
grandmothers would have had a dinner like yours with maybe candied sweet potatoes
and my grandmother always had a carrot and raisin salad.

Nothing elaborate, the usual ham, baked beans, potato salad. I've decided to do a medley of roasted vegetables and possibly rolls and banana pudding for dessert. I don't glaze my hams, although I love the taste. I always use leftover ham and bone for soups, beans, etc. and I don't like the sweet flavor in those dishes. Nothing decided on appetizers, I'm hoping the family will offer to bring something, if not it might just be chips.

Annie, do you ever make au gratin potatoes? that's the standard that my mother always serves with ham. She peels and cuts her potatoes into large chunks and boils them until just done, then drains. Meanwhile she makes a basic white sauce in a separate pan, adds her cheese (usually cheddar or a mix), S&P, then dumps it over the potato chunks, mixes, and serves. Everyone seems to always love them.

I will be traveling for Easter and what's weird is that they asked me to bring one of the cookies I make for xmas. lol!

ETA: I have found that my GF flour mix works beautifully for white sauces and such... much better than any single flour. It's the KAF version of (ordinary) brown rice flour, potato starch, and tapioca starch.

We will be in Jamaica on Easter so I'm not sure what dinner will be, but breakfast will be ackee and saltfish, hush puppies, and cainito. I'll be offline for a couple of weeks until we get home. Full joy everyone! Jah protects one and all.

Saturday: pulled pork and BBQ style sides, Italian cream cake

Sunday: filet mignon, augratin potatoes, strawberry cobbler

plus whatever stuff others bring by

We're having roast lamb with roast potatoes, butter beans, sprouting broccoli, cauliflower cheese, gravy, followed by pavlova with strawberries and a mixture of whipped cream and proper Corniche clotted cream as we're staying with our daughter and family in Cornwall in south west England where the proper pirates come from (near Penzance) lol can't get flageolets for DH doh!

My daughter's doing the honors, and will be cooking a leg of lamb and a leg of cured pork...AKA ham! Rosemary potatoes, asparagus, probably the other grandmother will make a Jell-o salad (!!!).
I will make challah tomorrow, because I like it better than traditional Italian Easter braided bread....and who's to know? And will bring a round of La Petite Blue...a new product from Maytag Dairy.....and I may make some chopped liver for an appetizer....or maybe make a red pepper hummos...or maybe both!

We're trying to do a variation of a Greek Easter dinner. My daughter and her husband are providing the roast leg of lamb. But due to a granddaughter's citrus allergies, the lemon will be in an optional sauce rather than sprinkled over the lamb while it's baking.

I'm making Greek potato salad. But, again, in deference to the citrus allergy, I'll dress it with olive oil & vinegar instead of the traditional olive oil & lemon. I'll make a pan of spanakopita and a pan of moussaka. Due to family members who are avoiding dairy, I'll also make a small moussaka casserole with just eggplant and tomato sauce -- no bechamel topping.

Finally, I'm making a braided Greek Easter bread flavored with mahleb and topped with red Easter eggs. It's a once a year treat, and I just love the stuff. My daughter-in-law is bringing some sort of gluten free, dairy free, egg free, citrus free dessert.

Everything I fix will be OK for my husband's sodium restrictions. I'll use salt-free cottage cheese in the spanakopita filing. I won't salt the potatoes or eggplant and will use salt-free tomato paste for the moussaka sauce.

I have a small butterflied leg of lamb that will be marinated overnight, a rice pilaf or a yellow rice and asparagus. Dessert is the cheesecake I am making on Saturday.

Annie: go with the au gratin or scallop potatoes. So easy in the crockpot.

DH's favorite potatoes are reds quartered and tossed with olive oil, rosemary, perhaps some onion and garlic powder. Roasted until crispy. Par boil the potatoes and they cook faster, or just prepare ahead and roast while you're having the egg hunt! Enjoy!

4 adults, 2 on a diet, so a somewhat light meal. Chicken cordon bleu with Dijon cream sauce, garlic potato gratin (new recipe, no cream or cheese), big spinach salad with cucumbers, tomatoes, beets, avocados, carrots, for dessert strawberry tartlets with whipped cream and French apple tart with whipped cream. The baby will likely stick with baby food, but am making extra whipped cream, just in case. :)

It's just the two of us and as traditionalist as I am (either ham or lamb) DH bought a prime rib! Some of my menu remains the same while some of it will change -- horseradish sauce, roasted potatoes, roasted asparagus, yorkshire pudding, and a lemon pie for dessert.

I didn't do either a Thanksgiving meal (we were in Arizona) or a Christmas meal (we were in Missouri) this past year. So I still have a turkey in the freezer that had been purchased in November. So we are doing turkey, dressing, mashed potatoes and gravy, and some sort of steamed vegetable (looking to see what's on sale this week....). Dessert is coming from our daughter, so it will be a surprise. Hubby didn't want ham, he wanted turkey.

We will be going to a potluck brunch at church. Our contributions will be cherry breakfast bars (GF) and turkey bacon. DD made some GF chocolate chip scones but they are a bit on the brown side, so I am not sure if we will be taking those or not.

After church, lunch is at my sister's house. We will likely still be quite full from brunch but I am responsible for dessert. My GF madeleine's did not release from the pan well, so those are staying home. I made a GF raspberry chiffon tart and some homemade marshmallows to take. DD made a GF orange pound cake so hopefully there is enough sugar to cover everyone's needs.

Never much of a change up here......some things are not to be messed with and apparently my family thinks Easter dinner is one of them.

Always too much food but the kids love their take away leftovers !!!

We had our Easter dinner this afternoon. Because we hosted relatives who would be making an eight hour drive within a couple of hours after the meal, we planned the menu to be a bit lighter than our usual holiday meals.

No appetizers and the main course was baked ham, apricot glazed golden beets, Brussels sprout leaves with browned butter, and pepper cabbage. Dessert was lemon sponge pudding topped with fresh raspberries and strawberries.

We had our dinner today. The ham was the best part, Elery smoked it about 10 hours, after 36 hours in brine, then half was served with a pineapple sauce and half without.

We had baked beans, broccoli/cauliflower salad, green beans with bacon, whole wheat/butternut squash rolls, and Nancync's gluten free brioche, which came out very well:

The kids were busy eating the chocolate that they found inside the Easter eggs, so they didn't want any other dessert.

We got out the special Easter deviled egg plate and Mother's old Easter tablecloth from the 50s, we use it every year.

We also had blueberry crisp and chocolate cream pie, but no one ate dessert except the Princess, who had this piece of cake. Everyone else ate too much ham!

The only fail, and there's always one, were those blasted potatoes. Even though I don't like cheese and the Princess doesn't like sauced anything, I made au gratin. Found a recipe that called for heavy cream, gouda cheese, butter, garlic. Gotta be good, right? Two hours at 350 and the potatoes were still hard. Cranked the oven up to 450 for half an hour, still hard. Put them in the microwave for 15 minutes, the microwave overheated and died and those potatoes were still hard. We gave up on the potatoes, even with $15 worth of gouda and cream, and ate everything else. The girls split up the potatoes and took them home, they are going to try to cook them some more. Ugh, I didn't even want to look at them again and was going to compost them, but the girls couldn't pass up all that cheese, LOL.

And so Elery and I took a trip into town and bought a new microwave after everyone went home.

We're playing it by ear. SIL has to work tomorrow evening and we decided we'd rather get outside and enjoy one of the first decent spring days. They have some leftover pot roast that will turn into bbq beef sandwiches. Probably some deviled eggs and The Kid makes a mean gluten free carrot cake. If I get going early enough I may try making my first GF burger buns.

DH is a little indignant about the lack of ham so later in the week I'll defrost a chunk and throw it in the instant pot.

I would be too Katie. Lol. This was Christy's first week back to work after her knee replacement, so we are keeping it simple and fairly traditional. Ham, mac and cheese made with perscatelli, steamed green beans and deviled eggs. I'm making an Italian pastia for dessert and since Christy is not as fond of it as me, she gets her favorite apple crumb pie.

Next weekend she'll get her yearly fix of Eggs Benedict and I'll have plenty ham scraps for my bean soups for the next couple months.

I prepped so much yesterday and the lamb is in SousVide, i'm bored. Gorgeous day so i'll do some gardening...

Annie, the meal sounds wonderful, sans potatoes! The kids are growing so rapidly, but I have to inquire-- is the Monkey Princess wearing your red crocs from Canny Camp? LOL

Want to report, I made Glendas pinapple casserole and got rave comments. I was a little wary of trying it, but figured all the possitive reviews could not be wrong. So easy and different, glad it was posted on Cooking thread.

Thanks for the photos and descriptions, Annie! I almost feel like I was there. We do not do anything special for Easter (since we are childless), and so we just barbecued a chicken in the BGE, along with some potatoes and some sausage to have later. We had the chicken and potatoes with a green salad, and that was pretty much it for Saturday, and on Sunday, I made burritos, using some of the leftover chicken plus beans, rice, and cheese. I made Spanish rice and spicy beans for the burritos, and I made the tortillas by hand, to make the burritos a tiny bit special. To me, the fresh tortillas taste like biscuits. In the past we have gone out for Easter brunch, but this year we filled out our Brazilian visa forms instead.

Ellen, those are not the red croc, they are my pink "house" Crocs. My kitchen has ceramic tile over cement and it's killer on the back if I try to spend much time bare foot in the kitchen. She wore some killer heels (yeah, sigh) and so borrowed my Crocs to hunt eggs. Of course, she wears a size 10 shoe, and I wear a 7, so they were a bit snug...

Lars, it's a lot more fun now I have Grandkids to play with, I'm not sure what I'll do when Madi and Maci are too big to convince that a bunny could actually leave eggs...

We'll just cook and eat, probably. Sunday morning is reserved for church services, of course, so Saturday was actually a better day to cook a big meal.

I wish you were closer, I'd invite you every single year!
