I like frozen peas best, but also Lima beans and any green beans. I also keep frozen spinach on hand, and also like frozen turnip greens. I think arugula freezes well, but I'm not sure about kale. I think broccoli is fine frozen, but I always buy it fresh. Carrots are good also, but I only buy those fresh as well. Celery root might be a good choice, but not celery stalks.

Hm, my veg harvest in the freezer. Definitely TallTop beets. Grown for the greens. I get a good crop early. Planted tight together. If i let them continue i get some baby beets. Sometimes i keep a third of the bed and thin. I freeze in 1/2 pints and some qrt flat pack. (quick blanch) I add a bit of water to fill air space. Whole beets i like the golden. They store well so i've not frozen.

I grow so many varieties of beans and peas. Love them fresh. If i get 'beaned out' and many harvested i quick blanch and cut 1/2 inch and mix them. I just don't care for frozen 'one variety' bean. I add to soups. Kale and collars blanched and cut very thin go together. Also good in hearty soups added last 10 min.

I grow summer squash for the flowers to stuff and pan sear. The small harvested zucchini when i have too many i freeze with some cut beans, fresh off the cob corn and basil and a diced tomato in qrt containers. A winter succotash. I saute an onion, then add the half thawed qrt.

The large zucchini i miss, inevitable, is target practice, boom.

The Italian Trobocino (sp) squash, the vining type i should try again. It grows well but zero flavor. Maybe with eggplant in an Indian heavily spiced stew. That should freeze fine.

Kakai is my favorite pumpkin to grow. The seeds are hulless and roast puffy and delicious. Expensive in the store and much better roasted fresh. Most don't care for the white flesh but roasted with onions and garlic them pureed, then frozen, in half pints or flat packed, is so creamy added to soups like potato/leek and chowders. A good potato replacement.

My #1 freezer staple is roasted mixed peppers and veg. Hot and sweet peppers. Garlic, tomatillo, onions, herbs. I made a tomato pasta sauce last night from the freezer. With pasta last night. A seafood chowder tonight. (i'll add corn). Tomato soup with grilled cheese tomorrow night.

That usually does it for the winter. Greens, beans, corn, (from my local farm stand), squash puree, rhubarb, berries. That was the last of the sliced frozen tomatoes last night. Still 6 or so qrts of whole cherry toms. A dozen greens half pints. Lots of corn off the cob. A few mixed roasted/smoked pepper blend.

Freezer is thinning out as it should. Hello Spring..

I grew Fortex beans last summer and they froze very well. Very tasty. As long as you have a way to support the extra-tall vines, you're good.

I've grown Fortex for several years. It's a great pole bean. Extra long beans. I can some and blanch some for the freezer.

The only problem I have with Fortex is spider mites. Spider mites seem to love them and attack Fortex before anything else. I grow Provider beans, too and those do well for me.

Sleevendog - if you drive nearby at the right time the Fedco tree sale is fun. Oh and in Skowhegan has a gristmill that is fun to see.

I bought a bunch of seeds today - just short of the amount needed for a discount. So I added a new pepper, a purple pak choy, a piracaiba broccoli and paid a few dollars less. And I treated myself to 5 sets of trays, lids, a plug trays - much better quality than what I get at the local stores.
