Friday night: what was your main meal today?
Comments (17)I went to a monthly picnic potluck in the park. We had salads, tacos, chips and little smokies in sauce along with cupcakes and mini cinnamon rolls. It's true potluck and you might have only 4 people show up or twenty. It was a good turnout with a lot of variety. There have been times when it was only desserts. DD met me there with the grand kids when it was toward the end so we could spend some time together. DGD entertained us with a song and dance she performed on top of an empty table. The world is her stage and she loves to rock out. LOL. She's 4. She wanted her 2 year old brother to take a turn but he was busy passing out Cheetos to everyone so we would be orange like him. ;-) Spent the rest of the day with DD and kids. Before I came home I drove another 12 miles to a diner I like. They have an extra special turkey club. it comes with avocado and cheese in addition to the turkey, bacon. lettuce and tomato. It's huge and the turkey is fresh roasted and cut thick. Comments (26)Grandson's birthday party was held in the afternoon. Went back to their house for gift unwrapping and finally left at 7:30. Stopped at a diner and had chicken noodle soup, chicken fried steak, baked potato, mixed steamed veggies and french bread and butter with iced tea. Burp....See MoreMain meal today
Comments (35)Well I was craving something hot & kind of gooey; had intended to have pea soup but just made Mac &Cheese with some of my tiny cherry tomatoes, spinach, baby kale & spring mix, and a sprinkle of bacon bits. I confess I used a box mix (really no faster than getting the cheese out of the freezer) ; I didn't add any of the butter it calls for though, instead I use fat free sour cream, a Tbs. of parmesan, enough water to make a smooth sauce after the powder is in, and a few grinds of black pepper....See MoreMain Meal Today
Comments (48)My sister had some family members over for dinner last night and she fixed Moroccan chicken with couscous. It was delicious!! Boneless chicken thighs cooked with a lot of spices, chickpeas, green olives, lemon juice and mint - not spicy but extremely flavorful! A simple spinach salad to go with. The best part was dessert.......and this was a new one for me - frozen bananas! You freeze very ripe (too ripe to use for just about anything else) bananas without the peels until hard as a rock. Then remove to room temp just long enough to allow them to thaw slightly - so you can easily break them into chunks. Put in a food processor or blender and smoosh to a creamy, smooth consistency and refreeze. That's it. Serve as you would ice cream. Tasted exactly as banana ice cream does but no added cream or eggs or sugar. It was amazing and I am not a huge fan of banana flavor (do not care for banana cream pie at all). She did add a small dollop of chocolate sauce over the top when serving, which didn't hurt :-) What a fast and easy and simple dessert!!...See MoreMarilyn Sue McClintock
