Comments (36)Recipe from The Brown Hotel in Louisville, KY. The Legendary Hot Brown Recipe Ingredients: 4 oz. Butter Flour to make a Roux (about 6 tablespoons) 3 - 3 1/2 cups Milk 1 Beaten Egg 6 tablespoons Grated Parmesan Cheese 1 oz. Whipped Cream (optional) Salt and Pepper to Taste Slices of Roast Turkey 8-12 Slices of Toast (may be trimmed) Extra Parmesan for Topping 8-12 Strips of Fried Bacon Melt butter and add enough flour to make a reasonably thick roux (enough to absorb all of the butter). Add milk and Parmesan cheese. Add egg to thicken sauce, but do not allow sauce to boil. Remove from heat. Fold in whipped cream. Add salt and pepper to taste. For each Hot Brown, place two slices of toast on a metal (or flameproof) dish. Cover the toast with a liberal amount of turkey. Pour a generous amount of sauce over the turkey and toast. Sprinkle with additional Parmesan cheese. Place entire dish under a broiler until the sauce is speckled brown and bubbly. Comments (18)This morning for breakfast I fried three red tomatoes and two green peppers the neighbor had given me, added some chopped onions, scrambled six eggs in a bowl and when the veggies were soft and tender, poured the egg mixture over it all and sprinkled with parsley. Threw in a handful of shredded cheddar cheese, salt and pepper. Let it cook until set and turned it once or twice. Comments (25)Raven, I hope you are feeling better today! Have you tried eating a little yoghurt? My pharmacist always suggests that to help with stomach problems caused by antibiotics. It does seem to help a bit. Everyone's meals sound so good! My 'diet' is pretty limited due to Gout, Osteoarthritis, high blood pressure, and one kidney. So reading here about pot roast, ham, meat loaf, meat balls, tuna, etc., has me drooling all over my keyboard! :^) I 'cheated' on my main meal yesterday. Had a lot of errands to do yesterday, and I was really beat! So I picked up some hot wings on my last stop of the day at Walmart. I love hot wings!
