Comments (150)Hi, everyone! I hope everyone is having a great day!!! I am incredibly busy, but just wanted to post at least once today! Thank you Tracy - I am SO happy to hear that you all loved the cranberry jam stuff! I have to tell you I made your homemade cranberry sauce yesterday, and my hubby LOVED it! He and I were the only ones that ate it - we always are! But, he went on and on about how it was way better than canned, and way better than any other homemade anyone has tried! Then, the stuffing! Girl - that was wonderful!! I did add a half pint of mushrooms that I canned a while back, and chopped them up very small so the kids wouldn't really notice them. That went really well too! Dave said it was the best ever, and my brother-in-law loaded half his plate with it! William is the only kid here that is a stuffing eater, and he loved it too! (So did I!!!) I am getting close to finished. Not really, but it's nice to say! I have all the chocolates and candy and cookies packaged. Just have to cut and package the fudge yet. Make labels and stick them to all the jars of preserves. Make the cocoa mix, muffin mix and pancake mix, and make all those labels and package them. Umm, make an order form and price sheet, make an inventory, and I'm sure much more, but that's all I can think of right now. I am not going to bring the cupcakes I'm afraid - I've just run out of time to finish those. I got some baked, but I don't have time to make frosting and make the decorations, so hopefully some people will check out my website, where I will post some of those soon, I hope! Anyway, gotta get back to work - I want some sleep tonight! : ) Hugs, Becki...See MoreTurkey sat out all night....
Comments (24)Carole, It may have been ok, but the fact is you just don't know for sure. In safetly/sanitation glasses we were always taught that meats should always be thawed in the fridge, and that in large poultry the entire bird must be kept under 42-degrees else bacteria form under the skin and then multiply and spread during the long cook time. Yes, theortetically, the bird gets cooked enough to destroy some bacteria, but not all strains. And some strains of bacteria are getting increasingly heat-tolerant. Obviously, some people take the chance and it's never been a problem. My mother used to thaw things overnight on the counter and never ever got sick from it. She did, however manage to send all of us (except me) to the ER at least once over the years with food poisoning. She claimed we were "wimps". My "wimpy" sister ended up in ICU twice. Oj, and the only reason I didn't end up in the ER? My boss called my BF because I was three hours late for work, and the BF was smart enough to realize that wasn't like me at all. He immediately drove over to my apt and found me passed out in the bathroom where I'd been for about seven hours. Tiny, tiny chance of that happening in the case you outlined, but totally not the way you want to spend your weekend....See MoreHave you cooked a turkey on convection roast?
Comments (42)Shoot- just wrote a long comment/question and it seems to have lost it. I just read this whole thread. I have cooked loads of turkeys but this will be first on convection. I have an almost 21# bird in the freezer (moving to frig tomorrow -Sunday). I usually brine but wanted to use less this year to be able to use the broth/drippings. I usually start breast-side down. I just read Pioneer Woman's article on trussing, so I am planning on doing that. I don't stuff but am open to the idea of putting butter and/or stuffing under the skin. (If it was going to be stuffed under the skin right before roasting, wouldn't it be okay to use my own stuffing recipe with eggs?) I have a digital probe thermometer that will beep when the set temp is reached. Question- How much salt is enough in brine solution and yet not too much to make the broth overly salty? I like MOIST flavorful turkey- I love gravy. I cannot stand the chokingly dry white meat my in-laws served years ago. ugh. That's what I really want to avoid....See MoreUser
