Turkey, What Did I Do Right?

I accidently made a great turkey last year. DW & I were alone for Thanksgiving as she had acute medical issues. I am generally just in charge of turkey basting and calculation of roasting time, but under the circumstances, was in charge of everything. My general experience of turkey cooked by our family and others is of similar somewhat' dry' white meat, although I would not have used the word dry since I had no other experience (other than recalling some here occasionally holding similar opinions). However, with various errors below, I made a succulent impressive turkey. Anyone have ideas what went right?

Our turkey was an inexpensive frozen 15 lb bird that had completely thawed in the refer. I followed a heavily packed bread stuffing recipe as I believe we normally do. We always followed Joy of Cooking's method which is stuffed turkey covered with oiled (JOC uses butter) cloth into 450°F hot oven dropped to 350/325 'til done. In rereading Joy I found my main error was misreading the roasting period per pound by almost 10 minutes/lb; OOPS!

While DW slept, I was working on dinner for 6pm ish but around 3:45 (~2.5 hrs in) I realized that the oven sensor probe was already over 170°F. I dropped temp briefly to 200 and then set to 325 and began slow work on dinner knowing that DW does not appreciate surprises. I had suspected that I might have placed the sensor probe poorly and hoped I had more time. But at ~4:15 I saw that the turkey pop sensor had activated and I turned the oven off keeping the turkey in the oven, cloth still on (breast had browned). I was rising rolls and around 5:15 (not completely risen) I found that oven had cooled enough that they could finish a quick extra rise there before baking in the second oven. I thin we served before 6.

So: why doesn't everyone leave the turkey in a cooling oven for an hour or two? Or was it something else?
