Do the nuts substitute flour or can it be counted as addition w/o affecting the rising ability?

Nuts are add in's....not affecting the recipe at all....unless you are talking about nuts ground so fine they are like flour. But chopped nuts can be added where ever and when ever, without regard to rising ability.

The weight of nuts, if there are too many, can affect the rise. With well developed, strong gluten in a white bread, you can get away with a lot and still get a good rise. With a less strong dough, I've managed up to about 20% of the weight of the flour in non-glutenous add ins, but none as heavy as whole nuts. Chopped would be better.

For finely ground nuts, the texture of meal or flour, again, about 20% of the weight of the flour works fine. More than that might be possible, if you want to experiment.

However you do it, don't substitute for any of the flour. Just add.

Ginny, the reason there are so many different ways to do things is that there are a lot that work. Having had a starter going for over a year now, I've found that it isn't that picky. For example, your original question of how much starter to add to make the sponge. It isn't critical. If the amount added is very small, then the sponge will take longer to double because it's starting out with very little yeast. If you add a lot and your starter is a wet one, then you may need to adjust the amount of flour you add to the bread later to get the dough right. I keep my starter in a glass jar in the fridge because it is a convenient size. I'm skeptical about the "no metal" thing. I wouldn't use a reactive metal, but I've stirred with stainless steel and haven't found it to do any harm. I sometimes let my dough rise in a stainless steel bowl. I was a bit worried about whether my starter survived chemo. I only managed to get it out once during the last 5 months when I went through several cycles of fed and double until it was doubling quickly again. Yesterday I finally got it out of the fridge again. It took a while to double (the house is pretty cool at this time of year too) but by this morning it had doubled. It is pretty hardy stuff.

Ginny, you will find all kinds of different advice. Here is how I use my starter. When I take it out of the fridge to feed it, I take 2 ounces of the discarded starter (60g) and mix it with 225g of flour and 225g of water. Stir well cover and leave to double. Once it is doubled, I add it to 1000g of flour , 680 to 750g of water, and 26/27g of salt. So based on when you want to make your bread. I would make the preferment now. It should have doubled in about eight hours. Then you can make your dough and put it in the fridge for an overnight longer fermentation. Bake tomorrow. Take the dough out of the fridge about 3 hours prior to shaping. It needs to come to room temperature and start to rise again. Then you can shape and proof and bake. If this is the first time you are using your starter, you might want to add a pinch of yeast just for insurance. Grainlady, here the ATT U-verse isn't available, and neither is cable/etc. My choices were dial up or satellite. A new company came in and now I have a big antenna on top of my house and my internet comes to me via radio waves somehow. It seem to work far better than ATT did at the White Cloud house, so I'm happy with that. My Windows 10, though, it's a real piece of carp. I have two son-in-laws who are computer guys for a living, one is the head of the IT department for a large company and the other one writes code and programs out in California. So I know my computer isn't the problem. Windows 10 is worse every time there's an upgrade, my keyboard locks up and won't let me type, the app store has disappeared, won't reload and I can't do many of things I used to do with Windows 7 because the apps aren't available and everything runs on the "apps". Ugh. I wish I had Windows 7 back. It worked. Annie

I have made a bread that is almost solid fruit and nuts, and the dough rises just fine between the dried fruit and nuts.>
The weight of the nuts has nothing to do with the rise. If your dough doesn't have enough substance, the nuts will sink to the bottom, but the dough will rise just the same.

Thanks for the information everyone. I have a bread recipe hat' large enough to make 1 1/2 loaves, so I wondered if I could just add nuts and raisins and make 2 decent sized loaves. Hopefully they don't turn out too flat. Appreciate your feedback.
