Kat, I agree totally with what you say about the builder. I was so very lucky when I did my major renovation last year (attaching a 120 year old removal house to mine as an extension) to have a builder who not only respected the age and integrity of the house, but had a fabulous visual eye and made suggestions which really made a big difference. Best of all, he rolled with the punches I kept sending him... Like fitting in antique arched church doors I found halfway through the build, curved Leadlight antique windows, a recycled federation arch he had to make fit....etc.! He saw those as challenges, and a great way to build and show off his teams skills. As a result, my house is going to be nominated for a heritage award this year. On the other hand, I have a workmate who is currently doing a major renovation on his old house, and is experiencing that his builder basically has a fit at any suggestion of even small changes. Believe me, I appreciate more than ever now what a treasure I had, and just how big a nightmare it might've been with a different builder!
My biggest tip would be to, when you are in the process of getting quotes, actually asking "how do you deal with the customer wanting changes during the build?" How they answer can tell you a heck of a lot about how easy you will find them to deal with.

Hi christyl_oz, very well put, something I have heard in my past from some builders or tradies, this one phrase "what do you want that for!" with a painful look on their faces, needless to say they didn't get the job! Your house sounds wonderful, if you feel you would like to post some photos here, would love to see them!

Kat, I actually blogged it here on Houzz, feel free to take a look by clicking on my name and looking there... I think that should find it, but let me know if not and I'll send the link.

back on the topic of kitchens...I've just had my builder back to make mine larger. There was a toilet next to the kitchen, and the wall between has been knocked out, fibro removed, and re panelled to match the kitchen..basically creating a large alcove and extra space. In the throes now of moving things around, etc, but loving it already...lots more space around the kitchen table!
