Too early to plant cool weather crops for a fall/winter garden?

Who is starting their winter gardens now? When do you typically start them?

I am hoping to get a cool season crop here in NE FL this year. My first freeze is usually somewhere between Thanksgiving to mid December. My last one is around the beginning of March. I have a green house but would rather use frostvcloths if possible for edibles.

Its still hot..mid 90's F. Its supposed to be rainy and mid 80's this next week so I am wondering if I can start lettuce, bok choy, collards, cilantro, dill, parsley, peas, etc. now?

What else can I start?

My tomatoes, eggplants, and peppers are still going strong so I didn't start any new ones. I still have 3 basil plants, rosemary, oregano, catnip, mint, and oregano. I want more herbs so will prob start a whole bunch lol.
