looking for hot pepper relish for sandwiches recipe

I'm not sure where to start hunting. Here in New England, when we order subs (grinders/hoagies) we have the option of adding "hots". It appears to be well ground up red peppers. I don't even know what kind of peppers. I'm growing a variety of hot peppers this year and would like to make some.

There's two pepper based relishes. Haven't looked in the Ball Blue Book but there may be one in there.

Thanks, the first one looks like it. I know the "hots" are red. Wasn't sure what kind of peppers were used. Guess ripe bells and jalapenos would work.

I suppose you can make a mustard pickle with them. Instead of cukes and any other added vegatables, you can substitute for onion and a few red peppers (hot or sweet) for some color. The mustard part will not need changing. For these, I use small boiling onions, cuke chunks, cauliflower and, some sweet red peppers. I make the mustard mixture by using both yellow and brown mustard seeds, celery seed, and vinegar. My recipe also called for a little corn starch, but I prefer to use Clear Jel as its safer, and more stable to can.

Green Tomato Pickle Relish Makes about 2 pints. 8 cups chopped green tomatoes 2 large onions, chopped 1 sweet red pepper, chopped 1/4 cup coarse pickling salt 1 1/2 cups cider or white vinegar 1 1/4 cups granulated sugar 1 tablespoon mustard seed 1 1/2 teaspoons celery seed 1/2 teaspoon turmeric 1/2 teaspoon cinnamon Combine vegetables, Sprinkle with salt and let stand several hours or overnight; drain and rinse with cold water. Combine remaining ingredients in large saucepan and bring to boil. Add drained vegetables and simmer uncovered about 15 minutes, stirring occasionally. Pack into hot sterilized jars and seal.

Now that you mentioned olives, I went back and looked at my Joy of Pickling book and realized that any recipe with olives is stored in the refrigerator. I was looking for a gardieneria recipe. Boy, are there ever a lot of unsafe ones out there! People canning all sorts of stuff with tons of olive oil, olives, veggies and little to no processing. Most of the instructions say " seal the jars and they will store on the shelves for up to a year". Yikes!

Be sure to read the notes that are after the recipe. You can use any type of pepper(s) you want as long as the total remains the same.

"In order to adjust the hot pepper intensity of the finished product,
the proportion of sweet to hot peppers may be adjusted according to
taste and the variety of hot pepper provided that the total amount of
measured ground pepper is not altered. In other words, with all other
ingredients measured as specified in the recipe, there should be no more
than 10 cups of ground peppers."
