Subbing strawberries for raspberries?

I'm pretty sure it's ok to sub strawberries for raspberries in Ball's Chocolate Raspberry Sauce, since strawberry pH is slightly lower than raspberry, but I'd like an expert to confirm :) I emailed Ball and I got the following, which I expected: We have not tested this recipe with strawberries using the water bath canner. However, you could make the sauce with strawberries and freeze the product.

Ball Raspberry Chocolate Sauce, makes 6 half pints:

1/2 cup sifted unsweetened cocoa powder
6 TbspBall® RealFruit™ Classic Pectin
4-1/2 cups crushed red raspberries
6-3/4 cups granulated sugar
4 Tbsp. lemon juice

It is a safe sub pH wise plus you have the added protection of the lemon juice. Note that strawberries often do not set as well as raspberries so you may not get the same consistency. You can compensate a bit for that by including some under-ripe berries.

The Oregon State method you referred to probably involves fairly fast-acting fertilizer, is intended for commercial farmers, and would work well. For blackberries, a good dose of manure-containing mulch applied in late fall or early winter works fine for the rest of the year, can protect the ground from freezing in winter and drying out in summer. Water becomes more important in late spring to early summer if your weather is dry then.

Ooooh, cherry-chocolate, that sounds fabulous! Only once have I been able to get really good cherries here. Sure wish I could more often. dianne - I linked to a discussion of this recipe.
