Mushroom hummus anyone?

We ate at a lovely restaurant called Portabellos in Kennett Square, PA. For an appetizer, they served mushroom hummus which was sooo tasty. It was dark and rich and musty (portabello?) and paired so lovely with red wine. Anyone have any recipe ideas?

Here's a recipe to get you started. I grew up near Kennet Square so our family had fresh mushrooms cooked in many ways, while other parts of the country had to use canned ones (also processed in KS).

I'm thinking it would have less calories than the traditional hummus, since it has less beans? sounds delish.

Mushrooms grow anywhere,...Oyster mushrooms is about the easiest to grow, can be grown in straw or straw bales easily, which I've done for several years but when I grew Shiitake on wood, I then gave up on the Oyster. Shiitake is one of the very best Mushrooms. Not sure how far you want to go,..get a mushroom growing kit, .buy your spawn and inoculate? This was my first step,..I then have made my own Oyster spawn on grain, also Shiitake wooden plugs and put into poplar logs, it has worked, also made my own sawdust, [oak] substrate and inoculated with shiitake spawn, you can have much faster result going this route. I have taken a course out in BC many years ago.

Injection is the toughest part of growing mushrooms. After some failures, my fool proof method is to harvest wood in Fall, soak it 24 hrs, inject it (often I just slice an old log, and nail the slice to the end of the new log), then place it in garbage bags in my basement for the winter. I punch a hole at the top of the bags and pour water occasionally. I have done the same by harvesting in April, and keeping the logs under plastic in my garage. Difficult to assess your situation without knowing your site, but during injection, high humidity is essential and almost sufficient, because I injected successfully in the 40, 50 and 60 temps. At any rate 1) here in the North it takes more than one year for logs to fruit 2) the many logs that did not fruit have been reused for hugelkultur, with excellent results. In particular they saved my orchard, which was planted when the soil was extremely poor. All my best trees have four failed mushroom logs under and all my dead trees had no logs. The logs do well under my trellises, with beans and squash growing roots in them.

There are literally 1000's of species of fungi that will produce various mushrooms (toadstools are just another name for mushrooms) when conditions are right and many are NOT edible!! You need someone experienced in mycology (and more particularly, your regional mycology) to make an identification. This is NOT something you should rely on an Internet forum for advice........the implications for inaccuracy could be deadly. Inquire with your local extension service office as to whether or not you have a local chapter of a mycological society you could contact or if they have referrals to any experts.

Did it seem to have beans or was it just mushroom pate, renamed with a trendy "hummus" moniker? Sounds interesting, in any event. What dipper did they serve?

It was a hummus texture...they had thinly sliced warm bread with it...they also had the dish of olive oil with garlic...

Olychick, I was thinking pate too. Have a recipe for a mushroom pecan pate I've never tried. Might have come from someone here years ago.

Well, it sounds wonderful. I looked at their menu online and they show a mushroom Gorgonzola hummus with roasted garlic, thyme, toasted fennel, sage, and tarragon - no mention of chickpeas or other beans. I wonder if they used portabellos or another kind of mushroom? I would think the roasted garlic and the cheese would make a really smooth, velvety texture, like some hummus is.

Kennet Square!! ♥ All I can think of is Longwood gardens...... well LWG & mushrooms. A slight bit of envy here...

agmss, yes, we went to lwg specifically to see the Orchid Extravaganza...I was definitely hyperventilating over all the beautiful orchids and vignettes...such a special place.

Sigh.... I love where I live now. But I used to live in NJ - I miss LWG, Chanticleer, Bowman's hill, Philly flower ( and more) show being close enough for a day trip. The Duke estate near Princeton has a lovely orchid display among other things - although they are specifically and oddly NOT a botanical garden.

Kennett Square... the (unofficial?) mushroom capital of the world?? Lots of mushroom recipes on lots of menus in lots of restaurants in that area. Have NO idea what might go into a "hummus"... going with suggestion that "hummus" might just be descriptor for something to dip into?? Had lunch, MANY years ago, at Kimberton Golf Course... after a very UNsuccessful round. Their "house dressing" was thinly sliced white button mushrooms in a vinaigrette... tasty. After that often enjoy raw mushrooms with drizzle of something as a side.

Just saw a mushroom app on a cooking show i was half paying attention to that i want to try. Called it a cobler. Mixed dried, soaked and chopped, mixed fresh sautéed with shallots, spice blender some dried porcini, sauté all together, little stock? i think, then some cream. Spoon into small ramekins and top with crumbled biscuit, then baked with a bit of grated cheese.
