Hot Pot Dinner

John Liu

Shopping for tonight's Chinese New Year hot pot dinner.

For the broth I have stewing chicken, beef bones, beef neck, pig feet, celery, onion, carrots, ginger. I'll start that as soon as I get home. You need a lot of broth for hot pot. We have 14 people coming.

For the hot pot I have different kinds of noodles, scallops, shrimp and shrimp balls, beef, various (alleged) fish and crab balls, some veg and bamboo shoots. Much of this was bought, premade and frozen, at the Asian grocery, but I need to slice and season the beef.

For side dishes I have stuff to make soup dumplings, shao mai, fried gyoza, steamed pork spare ribs, grilled mackerel, fried chicken gizzard. Also some pre-made pork buns.

Hot pot is usually a very easy dinner, but kind of boring because you (I, at least) don't actually make anything but a bunch of broth. I'm adding these side dishes, just to be entertained. It will end up as a mix of hot pot and dim sum.

Not sure about dessert. If i have time, I'll make some lychee ice cream. Otherwise, we'll get something premade.
