Loves2cook4six, my crock pot dinner was based on a recipe from Allrecipes.com. Link below. The recipe was not written for crock pot but of course I just cooked the chicken, sauteed the vegetables then put everything in the pot on high for 4 hours (or 8 on low). The recipe has pretty good review rating but I can't rate it myself because I did not follow the instructions 100%.

I pretty much used the spices listed (a bit more of everything because of the extra ingredients I added to my dish). I like to use lots of vegetables in the curry dish; that's one of the few ways I can get my two boys eat vegetables. I also used coconut milk and some fresh coconut meat instead of yogurt. Instead of a can of tomatoes I used tomato paste. Used potatoes to thicken up the sauce and added a pinch of cane sugar to make sweet curry.

I served it on hot steamed rice. Hubby loved the meal and little man liked it, minus the celery (go figure)!

Have fun and hope yours will turn out great!

Al

Thanks

May I ask why you modified for the SC. It seems like a pretty quick dish to make on the stove top.

What veggies do you like to add? We're working on incorporating more into our diet so any help is great.

Stacy hit the nail on the head : " With new babies and other little ones, we are lucky to get Spaghetti'o's for supper LOL. Add to that we have one,two or three little ones added to DH and I in our queen sized bed every night so understand about the sleep deprevation. " Drake is teething like crazy and was vax'd Thursday and won't go to anyone else and won't play in his exersaucer or on the floor, he has to have momma. That's why I needed a recipe for a whole chicken in the crockpot, I didn't have the time to take it apart, and didn't want to use the oven. Thanks for the recipes, ya'll. Changeling, it's ok. It wasn't entirely you, and I forgive you anyway. I just don't cook the way I used to. It's exactly like Stacy said, some nights I'm lucky to get a can of anything opened for supper. I simply don't have the time or sanity to prepare an elaborate meal. And the forum has changed since I first started posting here, not saying that's bad, just saying that I haven't been able to keep up with the changes because of the direction I've gone with my life. Lyra had it right, too - I come here to visit old friends more than to post about what sides might go with apricot-chili pork loin. I don't have the opportunity to drop in often because of my two little ones. If I'm AWOL, it's because of them. : P

Beef roast- 3-4 lb beef arm roast- for tenderness 3 cups water 1 medium chopped into slices yellow-and or- red onion 1 packet dry onion soup mix 1 small bag of baby carrots 5 white round potatoes chopped into cubes whit skins on-explain later 1 can of drained mushrooms(or 2 depending on how much you like them) 2 tbsp salt pepper seasoned to taste 2 tablespoon garlic powder- or you can replace salt with garlic salt 2-3 tablespoons of extra virgin olive oil basil, oregano, and any other of your favorite seasonings In crockpot mix together 2 cups water, half packet of onion soup mix, salt and pepper and any other seasonings. Put crockpot on high and let soup warm while we move to the next step Have a large skillet- big enough for the roast- place on stove with olive oil and turn stovetop to medium- let this heat up while your seasoning the beef First cut the beef roast in halves. Blot dry with a paper towel.. next take a knife and make slits in the beef against the grain all the way across just enough to score it for seasonings. season the beef the with the seasonings from above.. Braize the beef for about 5-8 minutes on each and everyside of the beef- until it has a nice brown coat. Once browned use a knife to poke slits through the beef to help the flavors cook through. Next step place the browned beef in the crockpot and put crock pot to either A) medium (will take apprx. 6-8 hours) B) leave it on high (apprx. 4-5 hours) Next in the skillet you had braized the beef in, add your potatoes, carrots, 1 cup water, the rest of the onion soup mix, the chopped onions, mushrooms as well as any seasonigs you desire leave skillet on medium and let simmer while coverd for apprx. 10 -15. This is why you leave the skins on the potatoes, it allows the potatoes to get soft yet the skin keeps them intact as they dont crumble..... yet. Once that has simmered simply pour into your crockpot. cooked for the alotted time. The roast and potatoes will be melt in your mouth, and with the onion/beef gravy on top will be flavorfull.

Here is my absolute favorite. I like to make a double batch and freeze half for another time. It was a "Supper Suppers" recipe and when they were going out of business I asked them for the recipe and they gave it to me. The below is for a full recipe. I actually like to halve it. Tandoori Pork with Pita (you can also make with chicken) 1 Pound Diced Raw Pork 1 cup diced onions 3/4 cups dried lentils 1/2 cup water 1/4 cup lemon juice 1/8 cup chopped ginger 1 tablespoon minced garlic 1 tablespoon paprika 1/2 tablespoon ground coriander 1/2 tablespoon ground cumin 1/2 tablespoon kosher salt (optional) 1/2 teaspoon ground cayenne pepper (optional) 1/2 teaspoon turmeric 1/2 teaspoon curry powder Seal and label bag. Place in storage bag and seal. Preparation: Thaw completely. If frozen or partially frozen, defrost slightly in microwave before cooking. Do not over-microwave, or meat will become tough. Cooking Instructions: Slow Cooker: Place all ingredients in slow cooker. Add 1 cup water. Cook on low for 8 hours. Pita wraps: Preheat oven to 325F. Place pitas on baking sheet and heat 3-5 minutes until golden brown. Fill each pita wrap with pork mixture, or serve with pita wraps on the side. Cooking times may vary due to differences in ovens. Sides: Olives, feta cheese

Sharing a favorite Thanksgiving Recipe... Posted by babblingbetty in 2003 Dressing has never been the same at our house! Get lots of request for the recipe....if you don't have a Crock Pot...it bakes up nicely in a 9X13 pan...just be careful not to overbake...remembering there really isn't a lot to cook...because if you were real smart...you cooked the eggs in the cornbread when it was baking! This is a very moist dressing...just in case you prefer a dry one...my family says yuck to dry dressing! This is a family favorite....so good and so easy! Gives you time to sit and visit a while with your family. Notice #1 calls for celery...my family does not care for celery so I use #2 Crockpot Cornbread Dressing #1 Cornbread Dressing 1 cornbread, 8 inch pan 8 slices day old bread, toasted and cubed 4 eggs 1 medium onion 1/2 cup chopped celery 1 tsp. poultry seasoning 1/2 tsp. black pepper 2 cans cream of chicken soup 2 Tbsp butter Lightly grease crock pot. Crumble cornbread into mixer bowl. Add all ingredients except butter. Pour mixture into crock pot. Dot top with butter. Cook on high 2 hours or on low 3-4 hours. __________________________________________________ Crockpot Dressing #2 1 (8 inch) pan cornbread 8 slices dry white bread 4 eggs 2 c. chicken broth 2 cans cream of chicken soup 1 tsp. sage 1/2 tsp. black pepper Celery to taste 1 med. onion 2 tbsp. butter Mix ingredients except butter. Place in crock pot. Dot butter on top. Cook 2 hours on High then 4 hours on low. Have a Wonderful Holiday!

I chose to start the crock pot early because I didn't have time to make dinner at dinner time yesterday. I also wanted to cook the veggies (especially potatoes) until very soft - that's how my two boys like it - also the longer the cooking time the better the flavor.

I usually use potatoes (carrot/yam/rutabaga), onion, celery, or any root/stalk type of vegetables in it, depends on what I have on hand. Tomatoes do add good flavor to the curry but you can go without.

If you want to incorporate more veggies cooking in slow cooker I have another idea. I use my crock pot to make lentil soup. I use red lentil because of the brilliant color. I sautee the veggies i.e. onion, parsnip/yam/rutabaga with celery and other veggies I like. Put in crock pot with water/broth/milk/juice (whatever your choice is). My family like a bit of ham in the pot so I put a small chunk of ham with a bay leaf or two, season with salt & pepper. Cook on high for 4 hours, or low for 8, until everything is very tender. Then I fish out the bay leafs and ham, puree everything else in a blender. The soup is very creamy and no veggies in sight. Slice the ham and chop up some fresh parsley and place them over a bowl of soup. Drizzle some yogurt or any dressing desired. My husband and little love this dish. I always serve it with some bread or a small salad.
