Recipe of the day - It's a Crock! (pot that is)

Tonite we're doing a New England Boiled Dinner. This requires:

a picnic ham (the pickled kind)

1 large onion, quartered

2 carrots, sliced lengthwise

1 carton ckicken stock

1 cabbage, cut up

enough potatoes for your family, halved

a few peppercorn

a little dried mustard

In your crock-pot, place the cut up carrots and 1/4-1/2 the onion.

Rinse the ham thoroughly to clean the jelly-like stuff off it. Sprinkle it with the dry mustard. Then place it on top of the carrots and onions. Toss is the peppercorns. Now pour the chicken stock in until 1/3 full.

Turn pot on low for 8-10 hours. When that is done, remove the picnic ham from the pot and set aside. If your crock pot liner cannot go on the stove, empty it into a larger pot and add the cabbage and potatoes and the rest of the onions to the stock. Cook until tender. Remove from pot, and keep warm while you make gravy with the remaining stock.

If you have a recipe for home-made mustard, it goes so well with this ham.

Mild Mustard Sauce

2 T Club House or McCormick Ground Mustard or Keens Mustard

1 T all purpose flour

¼ C water

Mix together as a paste, let stand for 10 minutes to allow flavour to develop. Stir in:

¼ C brown sugar

1/3 C vinegar

¾ tsp salt

Bring to boil over medium heat. Reduce heat and simmer 10 minutes, stirring frequently. Cool and store in refrigerator. Makes 2/3 C. Use as glaze for ham and chicken or as a sauce with sausages, prepared meats, roast pork or beef or in potato and macaroni salads.
