Has anyone ever made Medovik--Ukrainian Honey Cake

This is another recipe I want to make. I had it in a Ukrainian restaurant recently and gosh, it was good! It had 8 layers--photo below and click the link for the recipe! Recipe for Medovik

It has to be made 24 hours ahead of time.

I was wondering how to get the "cookie" layers to be more flat--in addition to docking the dough, I don't want the layers to bake up wavy.

Also, do you think it will freeze well, considering the whipped cream/sour cream, powdered sugar that's between the soft "cookie" layers? Input appreciated!

Oh my goodness that looks so yummy! I love honey anything - think I was highly influenced by Winnie The Pooh @ an early age = J

I don't think the waviness is a cause for concern because as it softens from the moisture of the filling, won't it flatten out...?

sooz, that looks just flat out amazing, I think I'd like it a lot. I do think that freezing with the filling already in the layers might result in a soggy cake, because the moisture would soften the layers both while waiting for it to freeze and again while thawing the finished product. However, I think the layers would freeze just fine on their own, to be filled later.

Of course, the only way to find out is to do it. (grin) Darn, don't you hate those experiments that you have to eat? :-)

Lpink, Oh, tart cherries! Back in my childhood in Ohio there was a tree in our backyard so I fondly remember wonderful cherry pies, and miss being able to get them here in the south. I love warm cherry pie (ala mode, of course) and was distressed at having to buy cans of tart cherries at an exhorbitant price, with very few cherries floating around in the can. Hmmm. Never really thought about substituting sour cream or yogurt for buttermilk. I hate having to waste most of a quart of buttermilk in order to make my mom's old cake recipe, then noticed cans of powdered buttermilk on the store shelves, so I've been using that for quite a while and don't notice any difference. . . except when I didn't sift out the little hard lumps which occurred while stored in the refrigerator.

Nope, not meringues. It's also known as seafoam or miners run candy 1 cup dark corn syrup 1 cup Sugar 1 TBSP vinegar Butter 9*13 baking dish or line with non-stick foil Bring to boil stirring till sugar is dissolved. Cook without stirring to hard crack stage (300-310*) Add 1 TBSP baking soda and mix in weell. Candy foams HIGH. Pour into baking dish and cool. Break into pieces when cold and dip in chocolate. Mine always falls flat and is not melt in your mouth tender.

Thanks everyone! FOAS, the only thing I can say is that I did "dock" some of the rolled out circles, and I did forget to dock others. I didn't get any big air bubbles on any of the dough circles, and did press down a bit when I was stacking them. Rob, you can tell it's not a perfect restaurant-made cake by the different color layers! lolam The photo in my original post on Jan. 30, taken at the restaurant that served this dessert, has perfectly even-colored layers. All in all, it was not difficult, just time consuming and if you follow directions, I'd call it fool proof! If you have an upcoming special occasion and you want a stunning dessert, this might be the ticket! The best "additional" thing I did to the original recipe was to add some drizzles to a couple of the layers (on top of the filling) before I put on another layer of the cake. Smiles, Sooz

Oh Carol, thanks for the grin! Yes, I think Winnie The Pooh would thoroughly enjoy this cake!

Annie, I took that photo before we (me, DH, and his BFF) dug into it at the restaurant... Oh yeah, I just find it soooooo difficult to eat those experiments! (NOT!)

Thanks for the input! I figure I'll make the layers on Tuesday, fill on Wednesday, and tuck into it on Thursday. It's supposed to be good for at least 4 days when it's all finished...or else, it never lasted past that 4th day because it was gone into people's tummies!
