Has anyone ever made Medovik--Ukrainian Honey Cake

This is another recipe I want to make. I had it in a Ukrainian restaurant recently and gosh, it was good! It had 8 layers--photo below and click the link for the recipe! Recipe for Medovik

It has to be made 24 hours ahead of time.

I was wondering how to get the "cookie" layers to be more flat--in addition to docking the dough, I don't want the layers to bake up wavy.

Also, do you think it will freeze well, considering the whipped cream/sour cream, powdered sugar that's between the soft "cookie" layers? Input appreciated!
