I'm still trying to eat lower carb, so this evening is baked chicken, an avocado salad, and sugar free strawberry jello for dessert.

Meatloaf, baked sweet potato, and a small amount of great northern beans. Tried a new meatloaf recipe. I won't let it go to waste but won't bother keeping the recipe either. Just so-so.

I am cooking a skillet dinner. Diced red potatoes, diced red onion, sliced green onion smoked sausage from Louisiana all in one big skillet with a little water to make a bit of gravy. Good stuff and super easy. Happy Mardi Gras weekend!

The missus went to a knitting retreat and won't be home until Sunday. I get to eat whatever I want. Tonight - a large salad with homemade vinaigrette. Washed down with a big glass of water.

Tuna salad sandwich and beer

Pan fried fish, coleslaw, toasted English muffin, rice side dish........pretty good!

I've been reading this forum for years. Decided to jump in. Ham steak with fresh pineapple and maple syrup roasted in the oven with a small acorn squash. Butter, salt, pepper and a bit of orange marmalade in the well of the squash. Had half of a bulb of fennel in the fridge. Cut into thick slices through the root end, sautéed with thick sliced zucchini salt,,pepper,, caramelized in olive oil, dusted with Parmesan.

Potato Soup, scrambled egg sandwiches and leftover from cracker barrel.

DH is stopping for Mexican. I'm having camarones de ajo with rice, beans and corn tortillas.

Party downstairs this afternoon with cake and punch. So I got lazy and decided to have bacon and eggs with a piece of English muffin bread toast. Probably have an apple after a bit.

Mixed salad (romaine, tomato, avocado, Bartlett pear, carrot, mushrooms, red onion with a roasted sesame (Asian) vinaigrette. (Maybe Jim. Ame by; maybe I went to his kitchen. We're on the same page.) Jim, try some Bartlett pair in your salad! Really good!

I made meatloaf and roasted carrots, potatoes and onions tossed in olive oil and sprinkled with red pepper flakes, montreal steak seasoning and some garlic salt.

We and a friend went to the Mandarin Chinese Buffet for lunch. He loves that place. We then went to Costco. No dinner tonite, but I'm nibbling on some bite-size kielbasa sausages.

I went to Applebeeswith some friends. Had a salad then went to the club house and played tripoli with other singles in my development. Was fun.
