Griulled Cheese
Comments (38)Best I've had was at Bleu Squid in Mystic Village in Mystic, CT. YUM!!!! My favorite is the The Original Grown-up Grilled Cheese (a mix of Havarti, Fontina, extra sharp Cheddar & Muenster cheeses) you can add tomato, and it's wonderful, but I usually don't. They are also known for their lobster grilled cheese, with chunks of fresh lobster... oohhhhh! I think i need to go there for lunch tomorrow!! I do have to say, I will not turn down Rita's menu. It's my husband's favorite, too... kraft singles, squishy wheat bread, and campbell's tomato soup. I think it's childhood comfort food. Personally, I think sourdough is the best foundation for a good grilled cheese :-) Here is a link that might be useful: Bleu Squid... check the menu tab and drool...See MoreDo you have a sandwich press?
Comments (15)Of course I have a panini press, Elery bought it. We used it twice, maybe three times, then it went into the basement and I haven't used it since. I don't have enough storage for it in my small kitchen and it's a PIA to go into the basement for it, so I use a cast iron pan for the sandwich with a smaller cast iron pan on top to "squish" it. (shrug) It works and saves me a gadget to clean and a trip to the basement. Don't mention it to Elery, though, he loves the darned thing and every time he thinks about it he asks why I don't use it, LOL. Annie...See MoreReciper of the day October 6 - Great Sandwiches

Comments (19)Oh man! I am almost drooling. LOL Mine is boring (but still pretty good), and kind of low fat. Well, lower fat. I have one of those pump and spray bottles that you put olive oil in, pump it then spray it in the pan (like Pam). So, first off I spray the skillet / pan with Olive oil. THen when it's nice and hot I lay the first piece of bread (usually whole wheat) down in the pan. Then I put grated cheese on the bread (light / low fat cheese usually a mozerlla + cheddar blend. THen put the top of the bread on the cheese. Lightly spray the top bread with olive oil. Then flip it over to let the other side brown. Really good, and evenly browned. You wouldn't know that it was low fat cheese and low in sat fat. And the olive oil makes it brown very nicely, and you probably use less than a teaspoon of olive oil for the whole sandwich. Probably a lot less than if you buttered the bread. Grilled swiss cheese is amazing! The one and only time I use ketchup is with grilled cheese....See Morelaceyvail 6A, WV
