Grilled Cheese and Fruit Sandwich

Prep: 15 minutes

Grill: 3 to 4 minutes

Ingredients

Â 8 slices white or egg bread, cut 1/2 inch thick

Â 2 Tbsp. softened butter

Â 1/4 cup fig or plum jam

Â 4 oz. thinly sliced Havarti or Monterey Jack cheese

Â 1 small pear or apple, thinly sliced

Â 2 Tbsp. sliced almonds or chopped pecans, toasted

1. Spread one side of each bread slice lightly with softened butter. Spread other side of 4 of the bread slices with jam. Top jam side of bread with cheese. Top cheese with pear and almonds or pecans. Top with remaining bread slices, butter side up.

2. Preheat an indoor electric grill. Place sandwiches on grill rack. If using a covered grill, close lid. Grill sandwiches until bread is golden and cheese is melted. (For a covered grill, allow 3 to 4 minutes. For an uncovered grill, allow about 6 minutes, turning once halfway through grilling.) Or, place sandwiches on a griddle over medium heat. Cook 5 to 6 minutes or until golden and cheese is melted, turning once.

Makes 4 sandwiches.

What a great sandwich for my diabetic husband...guess what he's getting for lunch today! I will tweak it a bit...whole wheat bread, sugar gree jam...he'll love it! Me too. Thanks...

This is from the Prioneer Woman site that Pattico pposted awhile back and very good!

Marlboro Man's Favorite Sandwich
2 to 3 pounds cube steak (tenderized round steak that's been
extra-tenderized
1 large onion OR 2 small/medium onions
4 French/Deli rolls
Butter, man
Lawry's Seasoned Salt
Worcestershire Sauce
Tabasco

-Slice onions and cook in 1/4 stick butter until soft and light brown.
Remove and set aside.
-Slice cube steak against the grain. Season with Lawry's.
-Heat 2 TBSP butter over high heat (in same skillet) until melted and
beginning to brown.
-Add meat in single layer. Cook one side until brown, then flip and cook
until brown, about a minute on both sides.
-Add 1/2 (at least) Worcestershire sauce, 5 to 6 shakes Tabasco, and 2 TBSP
butter. Add cooked onions. Stir to combine.
-Butter halved French rolls and brown on skillet.
-To assemble, lay bottom half of French roll on plate. Place meat mixture,
followed by a spoonfull of juice from the pan. Top with other half of roll,
cut in half, and devour

Ingredients:

1 box (15 oz) PillsburyÂ® refrigerated pie crusts, softened as directed on box
1/4 cup grated Parmesan cheese
3/4 lb very thinly sliced cooked ham
1/4 lb thinly sliced pepperoni
1 cup shredded Cheddar cheese (4 oz)

Preparation Directions:

1. Heat oven to 450Â°F. Remove pie crusts from pouches; place crusts flat on work surface. Sprinkle each crust evenly with Parmesan cheese.
2. Top each crust with ham, pepperoni and Cheddar cheese to within 1 inch of edge. Loosely roll up each crust; place rolls, seam side down, on ungreased cookie sheet. Fold ends under.
3. Bake 12 to 17 minutes or until golden brown. Cool 5 minutes. Cut each roll into 16 slices. Serve warm

This is one from my blog that I've made twice (if I make something more than once, that means I REALLY liked it.) Chicken-and-Rice Bake 3 to 4 boneless chicken breasts halves, rinsed and patted dry 1 Â½ cups chicken broth I used low-sodium Â½ teaspoon seasoned salt dash ground black pepper 4 tablespoons butter Â½ cup chopped celery 1 medium onion, chopped 4 tablespoons all-purpose flour 1 cup milk salt and pepper to taste 2 Â½ cups cooked rice (I used brown rice, over 3 cups - I didn't measure) 1 cup fresh bread crumbs (I used whole-grain white bread) 2 tablespoons melted butter 1. Place the chicken breasts in a saucepan with the chicken broth, seasoned salt, and a dash of pepper. Bring to a boil; reduce heat to medium-low, cover, and simmer for 20 to 30 minutes, until cooked through. With a slotted spoon, remove the chicken breasts to a plate. Cover loosely with foil and let cool. 2. Heat oven to 350 degrees. 3. Strain the broth into a large cup or small bowl; set aside. In the same saucepan, melt the butter. Over medium-low heat, sautÃ© the chopped celery and onion until tender. Stir in the flour until well blended. Gradually stir in the reserved chicken broth and milk. I've posted this one before but it is absolutely delicious! Sandra Lee's Gnocchi gargonzola chicken **This is my changed rendition 1 pound potato gnocchi **I buy the boxed at Publix 1 pkg Knorr's three cheese sauce mix 2 cups milk 3 garlic cloves jarred crushed not minced 6 ounces Gorgonzola crumbles 1 store-bought roasted chicken (approximately 2 pounds), shredded 2 tablespoons chopped fresh parsley leaves To a large pot of boiling salted water, add gnocchi and cook for 3 to 4 minutes or until they float to the surface. Drain and return to pot; cover to keep warm. In a medium saucepan, over medium-high heat, whisk together white sauce mix and milk. Bring to a boil stirring constantly. Reduce heat to simmer and add minced garlic and Gorgonzola crumbles. Continue to simmer, stirring occasionally for 2 to 3 minutes as sauce thickens; remove from heat. Add shredded chicken to gnocchi. Pour sauce over warm gnocchi and chicken, and toss to combine. Serve warm and garnish with chopped fresh parsley.

We have this a lot especially when the kids are all here...it makes a lot! Pork shoulder, cooked with barbecue sauce and onion, then shredded. Ingredients: pork shoulder roast, about 4 pounds 2 medium onions, thinly sliced 1 1/2 cups water 1 bottle (16 ounces) barbecue sauce, or 2 cups homemade sauce 1 cup chopped onion Preparation: Place half of the thinly sliced onions in bottom of slow cooker; add pork and water, along with remaining onion slices. Cover and cook on LOW for 8 to 10 hours or 4 to 5 hours on HIGH heat setting. Drain liquid from slow cooker; chop the meat coarsely and discard excess fat. Put the pork back in the slow cooker. Add barbecue sauce and chopped onion. Cover and cook on LOW for 4 to 6 hours longer. Stir occasionally. Serve with warm split buns and coleslaw. Serves 8 to 10.

My version of the Monte Cristo - take two slices of "texas toast" size bread and make french toast, after you flip the toast to cook the second side, add sliced ham, swiss cheese, sliced turkey and another slice of swiss cheese to the side that's already been cooked (I warm the meat in the microwave for just a second). Put the second piece of french toast on top and keep frying until cheese is just melted. Cut into fourths, sprinkle with powdered sugar and serve with strawberry preserves.

Now I want a Monte Cristo! LOL

Pesto Focaccia Sandwich
Ingredients
1 large deli-loaf focaccia or ciabatta bread
1 (3.5-ounce) jar prepared pesto sauce
1/2 pound thinly sliced Black Forest ham
1/2 pound thinly sliced roasted turkey breast
6 provolone cheese slices
1/2 small red onion, thinly sliced
Preparation

Cut bread in half horizontally using a serrated knife. Spread pesto evenly over cut sides. Layer ham and next 3 ingredients evenly over bottom half. Top with remaining bread half. Wrap in aluminum foil.

Bake at 450Â° for 10 minutes. Cut into 6 wedges.
