Our favorite side dish for Holidays.

CHEESE, BROCCOLI AND RICE CASSEROLE

1/2 c. chopped celery
1/2 c. chopped onions

Saute in 3/4 stick butter; set aside.

2 c. cooked rice
8 oz. Cheddar or Velveeta cheese
1 can cream of mushroom soup
1 (10 oz.) pkg. chopped broccoli, cooked

Mix all ingredients together in casserole dish. Bake at 350 degrees for 45 minutes, uncovered.

Sweet Potatoe Sausage Balls

3 cups biscuit mix
1 cup shredded sharp cheddar cheese
2 cups mashed sweet potatoes
1 lb. sausage (spicy or plain)

Combine all of the above. Roll into 2 and 1/2 inch balls & place on a greased sheet pan. Bake at 350º for 20 minutes until browned. Serves 6-8.

SCALLOPED OYSTERS

2 pints fresh oysters
1/2 cup cream
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup melted butter
2 cups cracker crumbs
Preheat oven to 400 degrees. Drain the liquid from the oysters, saving 1/2 cup of liquid. Combine the liquid with the cream, Worcestershire sauce, salt, and pepper. Combine the butter and cracker crumbs in a small bowl and toss to mix. Layer the crumb mixture and the oysters, drizzling cream mixture between the layers, in a shallow baking dish. Begin and end with crumbs.

Bake at 400 degrees for 20 minutes until top is golden and juices are bubbling. Garnish with lemon and parsley.

Someone here at the KT posted this years ago and I've made it several times and it is so wonderful!!!

Pumpkin Pie Cake
1 lg or 2 sm cans of pumpkin
4 eggs
1 can (12 oz.) evaporated milk
1 1/2 c. sugar
1 t. salt
2 t. cinnamon
1 t. Ginger
1/2 t. nutmeg
Beat above ingredients and pour into a 9 x 13 pan.

1 cake mix (dry) I use a yellow cake mix.
1 c. melted margarine
1 c. chopped nuts

Sprinkle dry cake mix over the pumpkin mixture. Pour melted margarine over the cake mix and sprinkle with nuts. Bake at 350 for 1 hour. Top with Cool Whip if desired.

Serves 12 - 15

The next one has been posted many,many times at the KT, but once I tried it its become a holiday side dish at every holiday get together, not just Thanksgiving!

Glenda's Pineapple Casserole
1 cup sugar
6 tablespoons all-purpose flour
2 cups grated sharp cheddar **grate your own
2 (20-ounce) cans pineapple chunks, drained, and 6 tablespoons pineapple juice reserved
1 cup cracker crumbs --I use saltine, but ritz works too
1/2 cup melted butter Preheat the oven to 350 degrees F.
Grease a medium-size casserole dish. In a large bowl, stir together the sugar and flour. Gradually stir in the cheese. Add the drained pineapple chunks, and stir until ingredients are well combined. Pour the mixture into the prepared casserole dish. In another medium bowl, combine the cracker crumbs, melted butter, Spread crumb mixture on top of pineapple mixture. Bake for 25 to 30 minutes, or until golden brown.

This isn't always on the menu, but more often than not. It's a great side, but almost a dessert.

BAKED APRICOTS

5 cans apricots, drained
1 lb. (2-1/2 c.) brown sugar
1 round Ritz crackers, crushed
3 sticks butter, melted

Place 1/2 the apricots in casserole. Sprinkle with 1/2 the brown sugar, 1/2 the crackers and 1/2 the butter. Repeat. Bake at 300 for 50-60 minutes. (I use maybe 1/3 cup less brown sugar and a little less butter if the apricots are small.)

Oooh, they all sound great!!! Think I'll make them all and try to trick DH Dokkkter into trying the corn pudding! (I may be just kidding, dear!)

See...dirtyfingernails...that's what you get for inviting your DH to join the KT....now you can't say anything about him ....good or bad....lol...if it's good, they get a swelled head and if it's bad...you gotta cook em a special meal or "something"....to get on the good side again...hehehe

Patti43....Your's sounds like a recipe I'm going to have to try...I might be the only one who'll try it...but it sounds really good to me...!!!!

How about a salad....

Fresh Veggie Salad

Cauliflower, cut up
Broccoli, cut up
Purple onions, cut up
Cucumbers, cut up...

fill a large bowl

Sauce to pour over .....

1 cup mayo
1/2 cup milk
1 carton French onion dip
1 pkg. Hidden Valley Ranch

mix together, pour over veggies and toss together.

Christmas and Thanksgiving at my parents house wouldn't be the same without her Turnip Puff recipe. Here it is, and it's excellent!

The perfect Thanksgiving and Christmas dinner make-ahead.

TURNIP PUFF

Ingredients:
6 cups cubed turnips
2 Tbsp. butter
2 eggs, beaten
3 Tbsp. flour
1 Tbsp. brown sugar
1 tsp. baking powder
3/4 tsp. salt
1/8 tsp. pepper
pinch nutmeg
1/2 cup fine breadcrumbs
2 Tbsp. melted butter

Instructions:
Cook turnip until tender. Drain and mash. Add butter and egg. Beat well. (This much can be done the day ahead.) Combine flour, sugar, baking powder, salt, pepper and nutmeg Stir. Butter a casserole dish and put in mixture. Combine crumbs and butter. Sprinkle on top. Bake at 375 F. for 25 minutes or until light brown on top. Serves 6

Not a side dish but great before the big meal!

Caramel Apple Cocktail

6 servings
1 tablespoon cinnamon sugar
1 lemon wedge **I used lemon juice and dipped glasses in
1 1/2 cups apple cider
6 tablespoons butterscotch schnapps
1 (750 ml) bottle sparkling wine, chilled ***kid friendly substitute club soda
6 maraschino cherries

Spread cinnamon sugar onto a small plate or saucer. Run the lemon wedge along the rim of 6 champagne glasses, then dip the rims into the cinnamon sugar. I put mine in freezer before guests arrive
Combine apple cider and schnapps in a measuring cup.
Divide evenly among prepared glasses. Divide sparkling wine among glassses.
Garnish with cherry.

This has been a favorite for years. Even with people who turn up their noses at the thought of oysters.

COTTONâÂÂS N'AWLINS OYSTER DRESSING - (Stuffing)

I don't have a 'recipe' for this, but this is what I do:

1 stick butter or margarine - (1/2 cup)
2 ribs celery, chopped
1 large onion, chopped
3-4 green onions, chopped
1/2 bell pepper, chopped
garlic powder, salt, pepper, dash of cayenne

Saute the above in the butter till tender. Add 2 pints oysters (save the oyster liqueur). Saute until edges of oysters curl.

Meanwhile, in a large bowl, pinch into bite-sized pieces 2 baguettes of crisply toasted French bread (approx. 12 cups?). Add the oyster liqueur, 4 beaten eggs, and a pinch of salt. Add the sauteed mixture, with oysters, at this time. If mixture is too firm, add a little milk until you get the desired consistency. Put into lightly sprayed/greased 9x12x2 (?) baking dish. Bake, uncovered, at 350 for approx. 35 to 45 minutes. You don't want it to dry out, so check at 35 min.

I can't get fresh oysters here, so use 1 can of whole oysters and about 1/2 a can of smoked oysters.

Yum!

We need some more ideas! I'm positively bored with the usual mashed potatoes, turnip, peas and carrots! I'm desperate for new ideas!

Two great dishes:

Broccoli Cornbread

1 cup fresh broccoli or 1 10 oz pkg frozen broccoli
1 pkg Martha Washington (Cotton-pickin') cornbread mix
3 eggs
1 stick butter, melted
1 med onion, chopped
1 cup cottage cheese
1 tsp salt
Cook broccoli until tender, drain. Beat eggs, cottage cheese and salt together and add cornbread mix, butter onions and broccoli.
Pour into a greased 9 inch square pan and bake at 400 degrees for 25 minutes or until lightly browned.

Sweet Mini Apple Dumplings

2 8-oz tubes refrigerated Crescent rolls, seperated.
4 apples, cored, peeled and scliced into 8 wedges.
½ cup butter
1 cup sugar
1 cup water
½ tsp cinnamon

Cut each crescent roll in half, forming 2 triangles from each. Roll up one apple wedge in each triangle, crescent roll style. Arrange in a 13X9" baking pan coated with non-stick vegetable soray. Set aside. Put butter, sugar and water in a small saucepan and bring to a boil. Reduce heat; boil and stir until sugar dissolves. Pour over crescents; bake at 350 for 30 minutes. Sprinkle with cinnamon. Makes 32.

Those apple dumplings sound absolutely wonderful. On my 'must try' list, for sure.

I've made those Sweet Mini Apple Dumplings and they ARE wonderful. Believe me, you'll need all 32 of 'em too!

glenda_al, I don't think I can wait until Thxg. to try that drink! All my favorites in one! Do you have measurements for individual drinks by chance? Otherwise, I guess I'll just have to have 6 of them! :D

I guarantee you can't stop with one!

Friend and I had an afternoon drink, back in the winter, and here's what I did.

1 Tbl butterscotch snapps in champagne glass
On the side, mix Apple juice (which is what I had instead of cider) and club soda to taste. More juice than soda. And pour into CINNAMON RIMMED glasses.

The cinnamon sugar is what makes the drink!
