Bacon-Wrapped Chicken Stuffed with Spinach and Ricotta

Original recipe yield 4 stuffed chicken breasts

Â 2 tablespoons extra-virgin olive oil

Â 2 teaspoons minced garlic

Â 1 (10 ounce) bag washed fresh spinach

Â 4 skinless, boneless chicken breast halves

Â 1/2 (15 ounce) container ricotta cheese

Â 2/3 cup grated Parmesan cheese

Â 1/2 teaspoon garlic salt

Â 1/2 teaspoon onion powder

Â 2 teaspoons Italian seasoning

Â salt and pepper to taste

Â 8 slices thick sliced bacon

1. Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 9x13 inch baking dish.

2. Heat olive oil in a large skillet over medium-high heat. Add garlic; cook and stir until it begins to brown, about 30 seconds. Quickly stir in spinach, and continue cooking until the spinach has wilted. Transfer the mixture into a bowl, and set aside to cool.

3. Slice through the chicken breast horizontally to within 1/2 inch of one long edge, then open the meat like a book. Place each opened chicken breast in between two pieces of plastic wrap, and pound with a meat mallet to a thickness of 1/4 inch.

4. Stir the ricotta cheese, Parmesan cheese, Italian seasoning, garlic salt, and onion powder into the cooked spinach until blended. Evenly divide this mixture among the chicken breasts, then roll each into an oblong shape, like a burrito, tucking in the ends. Season to taste with salt and pepper, and sprinkle with Italian seasoning. Wrap each breast with 2 strips of bacon, and secure with toothpicks. Place into the prepared pan.

5. Bake in preheated oven until the bacon is brown and crispy, and the chicken is no longer pink, 45 to 60 minutes. Remove from oven, and allow to rest for 5 to 10 minutes before removing toothpicks and serving.

Made this for a gals luncheon, today.
Made some corrections after searches.

Chicken cheese ball
2 (8 ounce) packages cream cheese, softened
1 (1 ounce) package ranch dressing mix 1 Tbl plus 1 tsp was plenty
1 (5 ounce) can chunk chicken, drained Used 10 oz
1/2 cup chopped pecans

I'm taking Keebler two sided crackers, and party whole wheat bread to serve with the above.

DIRECTIONS
In a medium bowl, combine cream cheese, ranch dressing mix and chicken. Form the mixture into a ball.
On a cutting board or a piece of wax paper, spread the chopped pecans. Roll the ball in the pecans until it is fully coated. Wrap the ball in plastic and chill for at least one hour

The below Aussie Chicken Recipe link is one of my all time favorite chicken dishes. The honey mustard sauce is awesome and can be used on other dishes or even for salads. Yummy!

This is one from my blog that I've made twice (if I make something more than once, that means I REALLY liked it.) Chicken-and-Rice Bake 3 to 4 boneless chicken breasts halves, rinsed and patted dry 1 Â½ cups chicken broth I used low-sodium Â½ teaspoon seasoned salt dash ground black pepper 4 tablespoons butter Â½ cup chopped celery 1 medium onion, chopped 4 tablespoons all-purpose flour 1 cup milk salt and pepper to taste 2 Â½ cups cooked rice (I used brown rice, over 3 cups - I didn't measure) 1 cup fresh bread crumbs (I used whole-grain white bread) 2 tablespoons melted butter 1. Place the chicken breasts in a saucepan with the chicken broth, seasoned salt, and a dash of pepper. Bring to a boil; reduce heat to medium-low, cover, and simmer for 20 to 30 minutes, until cooked through. With a slotted spoon, remove the chicken breasts to a plate. Cover loosely with foil and let cool. 2. Heat oven to 350 degrees. 3. Strain the broth into a large cup or small bowl; set aside. In the same saucepan, melt the butter. This is what I had saved on the bottom of that recipe Mammie. Evap milk in place of the half and half. I couldn't find the garlic seasoned chicken broth either. Sure does sound good--very hearty. I wish we would get some cooler weather so we can start enjoying the fall/winter vegetables and fruits. Got this recipe over on the Cooking Forum. It's a keeper. Never thought I liked Brussel sprouts until I had them NOT cooked to death. It got raves over at the CF--for good reason! MARILYN'S BRUSSELS SPROUTS 18-20 Brussels sprouts, cut in half Salt and peper to taste 2 Tbsp. butter 2 Tbsp. flour 3/4 c. milk 1/4 c. feshly grated Parmesan cheese 2 Tbsp. real mayonnaise 2 Tbsp. cracker crumbs Clean sprouts by cutting off the tip of the stem and removing the tough outside leaves; wash in cold water. Place in a single layer in a medium skillet. Sprinkle with salt and pepper and add enough water to fill the bottom of the pan. Cover, bring to a simmer, steaming sprouts until a knife inserted comes out easily. Do not over cook. Immediately remove from heat and plunge into ice water to stop cooking and set the green color. Remove liquid from skillet and add butter. When melted whisk in flour along with more salt and pepper. Stir until smooth and bubbly. Cook about 2 minutes. Whisk in cold milk gradually until smooth and mixture thickens. Stir in cheese, remove from heat and stir in mayonnaise. Add sprouts to sauce and pour all into a casserole. I've made this many times and posted it here once before and someone tried it and said they liked it so posting again!

Black Beans and Chicken
1 can Black Beans
1 can Corn
1 jar Salsa
1/2 Brick LF or FF Cream Cheese (cut in chunks)
4 Frozen Chicken Breasts

Cook all together except for cream cheese on high in crockpot for 5-6 hours. In
the last 1/2 hour, throw the cream cheese on top & let it melt.

This is good also! I double the garlic and butter cause DH loves to mop that up as he's eating his chicken!

Garlic Butter Chicken for Two

2 boneless, skinless chicken breasts
1/2 tablespoon garlic
pinch of salt
1/2 tablespoon pepper
2 tablespoons butter

Preheat oven to 375Â°F.
Combine all of the above ingredients, except the chicken in a
microwave safe bowl.

Microwave until butter is melted. Set mixture aside.

Wash chicken breast and place in an 8 inch square cooking pan.

Pour mixture over chicken breast, then flip the chicken breast over to
make sure it is completely coated.

Place in oven for 30 minutes.

Slow Cooker Chicken Taco Soup

Ingredients
1 onion, chopped
1 (16 ounce) can chili beans
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn, drained
1 (8 ounce) can tomato sauce
1 (12 fluid ounce) can or bottle beer
2 (10 ounce) cans diced tomatoes with green chilies, undrained
1 (1.25 ounce) package taco seasoning
3 whole skinless, boneless chicken breasts
shredded Cheddar cheese (optional)
sour cream (optional)
crushed tortilla chips (optional)

Cooking Instructions
Place the onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours.
Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.
