Supper Time on Friday!

I am not having any supper this evening, I had a big lunch. I had fried chicken, white gravy with bread and a baked sweet potato with butter. What are the rest of you having this evening? The sun is out this afternoon and good to see it. I am going to the Christmas Program that Alyssa's preschool is having this evening.

Sorry I am late! The missus does lunch and I do dinner. Without talking about it, what she made for lunch was my intended dinner! Nuts!

Frozen ground beef - aha - sloppy joes. Nope. No buns, cannot have sloppy joes just laying on the plate! Start putting stuff in the skillet. Chopped onion, garlic, ground beef. OK, looking good. Wait, how about some elbow macaroni to go with it. OK, we're on our way. Looks bland, add some diced green pepper to the browning meat. Time to kick it up a notch, add some fajita seasoning. OK, if we're going to do that, then gotta add some salsa. Pasta is done, put all together. Yeah, some dried cilantro. Need something else, a side dish - aha, sweet corn from this summer that is in the freezer. Taste the food meat thingy. Sorta spicy.

How to deal with the spice issue? Aha (again) - chocolate fudge instant pudding. Milk will help put our the fire on the tongue and lips.

Ta-da! A great meal! Or so the missus said.

I have a pizza crust languishing in the fridge. I’m going to roll it
out, layer with slices of provolone, hard salami, ham, turkey, thin
sliced onions and tomatoes, sprinkle with a little Italian dressing,
roll it up and bake. (With fingers crossed. LOL)

Snow flurries!? ugh. It's chilly here this evening after a sunny day. Altho throughout the afternoon I couldn't make up my mind if I was hot or cold. One minute I needed a coat, the next I was sweating. Drove a neighbor to a greenhouse to get some flowers to plant her containers, came home and then drove my Mom to a different greenhouse to buy the begonias she always plants in front of her fence. We ended up at a second greenhouse where she bought three large hanging boston ferns which are gorgeous and some plants for her garden urns. I bought two flats of annuals, which I don't want to put out right away as we expect an overnight temp of 35 Sunday night or Monday morning. But I was afraid the plants would all be sold if I waited. Anyway, I fried sausage, potatoes and onions, and had corn as a veggie. Then Raspberry sherbet swirled with vanilla ice cream for dessert.

Nicole - here's a link to the recipe I used http://www.food.com/recipe/not-your-usual-lemon-artichoke-chicken-177737 Since I was just cooking for 2, I only used 2 chicken breasts but made the entire amount of sauce and all of the artichoke hearts. I added the capers, as well. Other variations of this recipe called for using creme fraiche instead of cream, and frozen artichoke hearts (thawed) instead of canned and that's what I did differently. Orzo really worked well alongside of this.

Hubs took Amiee and the boys to Steak and Shake for burgers and shakes. I stayed home I'm not any where near well enough yet to go out. I ate a cup of Liptons Noodle soup and a grape popsicle. I had hubs take chili out of the freezer for tomorrow, will have a garden salad and corn muffins with it.

A new chicken dish for me. Donna on Cooking forum posted a recipe for Peruvian Chicken with a green sauce a couple of days ago. I have it prepped and ready to put into the oven in about another 45 minutes, green sauce made. I think rice and steamed carrot sticks for sides.

Our oldest grandson called Monday and said surprise we are coming to visit Friday through Sunday with our 2 little great grandchildren. We are preparing for a week long trip to Louisiana for Christmas in the RV leaving Monday , so this was definitely a big surprise. Lol

So I loaded the slow cooker with red beans and great smoked sausage with rice he said they like red beans and rice, I have some creamy Coleslaw, a green salad, some melons diced up, and an Apple pie for dessert.

What a nice surprise, Raven!! My supper was what the Meals on Wheels brought me today. Hamburger gravy, mashed potatoes, mixed vegetables, tropical fruit, bread/butter. They feed me well.

I made a "fake" beef stew. I had browned and frozen three packages of ground beef last week.

I sliced a couple large potatoes, a couple onions, a bunch of carrots, and put them in a stew pot to simmer with half a bag of frozen green beans, garlic, thyme, salt and pepper. I added a package the browned ground beef, a can of Crème-of-What's It soup and let it simmer.

It's not as good as if I used a browned chuck roast and carmalized onions, but it's hot, tasty, and filling.

Am having our cocktail party tonight at 8:00, so we sitting down to a couple of Cobb salads from Steakout, and I have my feet up, lol. Everything is done that can be done, caterers have delivered everything, the bartender will come at 7 to set up, and my helper for the night will be here at that time, too.

I think I'll have a cup of coffee with my supper....something I never do but seems like a mighty good idea tonight!

Caroline, my dad used to make "hamburger stew" (sans can o soup) whenever we would go camping. Tasted like manna from heaven to us. I still make it whenever I need something comforting.

I was going to make chili tonight, but, on opening the fridge door, saw that I had a portion of a chop and gravy that were begging me to eat them, along with some mixed vegetables, so that was easy! Chili sounded good, as it is only 9º here right now!

Lake Erie perch, baked potato and salad. Went out to dinner with a group from the senior center I belong to. We eat out twice a month at different local restaurants.

I've been run through the wringer for the last few weeks and today was my first semi-normal day since mid-November. We went to the little local diner tonight -- it's the last Friday of the year for that! I had their salad bar with both soups (Newport Seafood Chowder and Stuffed Pepper), broiled haddock, mashed potatoes, and coleslaw. New waitress and she was great!
