Supper Time on Friday!

I did not have lunch as I will be going out this evening for Amber's birthday at Pizza Shack. I plan to eat lots of salad, spaghetti, and a plate pizza, that is just the toppings and really good. Possibly some birthday cake. I don't always eat birthday cake. I did have a big breakfast early this morning. How about you, what did you have for your main meal?

A new chicken dish, Honey-teriyaki glazed chicken with roasted asparagus and left over scalloped potatoes. I am hungry! It will be ready in about an hour.

I didn't eat all my lunch today. I made a small salad, will reheat the noon leftovers of stuffed chicken breast, some mashed potatoes w/gravy. That makes my supper almost totally free.

We still had some ham left over from Sunday dinner. I'd made a yummy soup with some of it a few days ago, so tonight I decided to make ham, cheese, and egg biscuits, and my DD cut up some veggies. I used the rough puff method of mixing the biscuit dough--they came out crispy and layered and really good. I julienned the ham and warmed it in the skillet after I cooked the eggs, mounded it on top of the egg, covered with cheddar cheese, and put them back in the warm oven until the cheese was soft. If you've never made biscuits that way, I recommend it!

We are visiting family in Massachusetts. They had bought a whole beef tenderloin and I was asked to help get it ready to grill. I remembered having read just that morning a recipe for a spice rub for steak in a magazine I brought with me on the plane. I found the magazine, and found the recipe, which was titled "coffee spice rub". They didn't have all of the ingredients that the recipe called for, but had most of them, and the results were pretty darn good. I also made a mushroom sauce to top the steaks and a vegetable lo-mein side dish and a mixed green salad.

Nicole - here's a link to the recipe I used http://www.food.com/recipe/not-your-usual-lemon-artichoke-chicken-177737 Since I was just cooking for 2, I only used 2 chicken breasts but made the entire amount of sauce and all of the artichoke hearts. I added the capers, as well. Other variations of this recipe called for using creme fraiche instead of cream, and frozen artichoke hearts (thawed) instead of canned and that's what I did differently. Orzo really worked well alongside of this.

Hubs took Amiee and the boys to Steak and Shake for burgers and shakes. I stayed home I'm not any where near well enough yet to go out. I ate a cup of Liptons Noodle soup and a grape popsicle. I had hubs take chili out of the freezer for tomorrow, will have a garden salad and corn muffins with it.

Probably some more butternut squash soup. DH has gone to an annual dinner, so I'm winging it. It might involve wine. :)

I don't know yet. We are currently driving to a casino that is about two hours away. We will be eating there and spending the night as well.

Wah! *I* want an avacado now! Not buying the teeny $3 ones in our stores right now. They are so small, they are all pit.

Boring dinner here. Steak, baby peas, a slice of good bread. (You all know I don't really 'cook'. Maybe I should re-think that; my looks are shot.)

I am doing some thin chicken breast with a lemon pepper and herb sauce. Steamed broccoli and cauliflower to go with it. We have not been eating very much these days so just small meals.

Leftovers: Chicken & rice, with the spicy veggie sauce the chicken was cooked in drizzled over it.

A new chicken dish for me. Donna on Cooking forum posted a recipe for Peruvian Chicken with a green sauce a couple of days ago. I have it prepped and ready to put into the oven in about another 45 minutes, green sauce made. I think rice and steamed carrot sticks for sides.

Tonight was Trivia night which included dinner. Dinner was Caesar salad, broccoli and cauliflower, mashed potatoes, salmon and roast beef. Assorted desserts.
