Supper Time on Friday!

Well, supper time has rolled around and now I need something quick to fix for just me. I think I will have a veggie omelet, not sure what to drink, tea or milk. It has really been a cloudy day here. What are you having for your meal this evening?

Tasso is very good quality pork steak that is heavily smoked in a smoke house and rubbed with red pepper and Cajun seasonings. It is use often to flavor a dish and in gumbo, jambalaya etc for it's wonderful smoked flavor. It can also be pan fried and makes a nice red eye gravy. Usually it is from a very lean cut of pork like the loin. Some people call it tasso ham now but it isn't actually ham.

Sounds like you need to slip in some orange juice or orange slices for the missing "sunshine" with your meal. ;-)

Dreary here all day long, too. We're going out to dinner with out-of-town friends for a combination November birthdays (we missed getting together due to bad weather) and early Christmas. I made a gluten-free cake for dessert at our house.

I wanted to try out the hamburger I got at the new butcher shop in town yesterday. I fried it up and added pork n beans that I doctored up with mustard. Fixed a small side salad to go with it. It was cloudy all day here in Ohio. I miss my sunshine.

There were several pieces of the salmon I baked left over, too. I'd never thought of salmon chowder until I read caroline's post above, so I googled it. I wonder if I could call it chowder if I left out the corn? I've never been able to eat creamed corn. I made chicken stock last week, and I could use some of the finely diced peppers left from last night. We love cream of potato soup, so maybe I'll try something new tonight. ETA, I found a recipe with carrots. That works!

The last of the green pepper soup the neighbor gave me plus fried green tomatoes and I also fried some brussel sprouts before they went bad. Never tried that before, they got a little too brown, but tasted alright. It's almost 9pm. and I'm getting hungry for "something". Had veggies and dip, but that's not hitting the spot. ha. Maybe a little bit of cottage cheese.

We were out of town running errands today, it was Costco day. Couple of other stops, when I'd planned for Friday earlier in the week I'd forgotten it would be Veterans Day and everyplace would be crowded and with sales. I'm not great with crowds ;0) and the lines to pay at Penney's were silly long but we did accomplish what we'd set out to do. Pulled off in a little town about halfway home to a Mexican restaurant we knew to be good, just had a very quick dinner there.

Hubs took Amiee and the boys to Steak and Shake for burgers and shakes. I stayed home I'm not any where near well enough yet to go out. I ate a cup of Liptons Noodle soup and a grape popsicle. I had hubs take chili out of the freezer for tomorrow, will have a garden salad and corn muffins with it.

I made a huge pot of smothered cabbage and turnips with meaty ham hocks and tasso last night so tonight we have left overs.

I cleaned and grilled a couple of big portobello mushrooms, then added a nice slice of fresh mozzarella, a little purple onion, basil leaves, and a sprinkle of balsamic vinegar. Robert had his on a grilled slice of crunchy bread. A green salad rounded out the meal; I'm harvesting cool season greens from the garden.

Just me tonight so I'm eating leftovers--mac and cheese from Trader Joe's and a couple of ravioli's with tomatoes. Raven--what is tasso? That looks good. :)

Raven, the tasso looks so good. This may be a dumb question, but how 'hot' (spicy) is it?

It may sound dull, but made another lucious large pot of an unnamed soup with home-made chicken stock base and every vegetable and fresh herb I could find to toss in. Yum.

Rhizo, it depends on who made it basically. I have had some that was extremely hot and some that was barely warm. But usually you can see the amount of red rubbed on the surface and you can soak it and release some of the pepper off of it. I don't like it really hot. You have to be sure not to season the dish you are adding it to very much till the tasso has been in it a while, tasting is important. The piece in that picture doesn't have a heavy coating or crust of seasonings but some sure does. Like this one.

By the way since it's fully smoked you can just cut off slices and eat it, it's good with cheese and crackers.

If anyone would like to order some here's the link to Teet's smoked meats store in Ville Platte, Louisiana. It's the first picture and not really hot. Very authentic Cajun food. They ship. The place I buy mine when I am down home doesn't ship out, it's in Basile and omg I love to go there, just walk in and your mouth starts watering! Best slab of smoked ribs I have ever had, getting more for Christmas.
