Cooking a farm-raised turkey for the first time

Hi everyone! First-time poster, long-time lurker. :P

I was recently gifted with a 17lb home-grown turkey and it is currently tucked away in the depths of my freezer awaiting Thanksgiving. My experience with turkeys has been the usual Butterballs and Honeysuckles. From those of you with some knowledge of these birds, what is it that makes them taste better/different? And, what should I do differently (or the same) when I prep and roast them? I don't think the bird is a heritage turkey, but looked more like a broad-breasted white, perhaps?
