Sounds good, you soup makers! I'm a soup maker too. Today I made this one:

Quick Apple & Sweet Potato Soup

Only changes were dried herbs instead of fresh, a regular onion instead of Vidalia, and King apples instead of Granny Smith. I wouldn't call it "quick," but it's delicious!

My "double apple meal" also included a salad of mixed greens and walnuts with this dressing:

Apple Vinaigrette

We are having boneless center cut pork chops, cooked in mushroom soup, with peeled cut up potatoes added, and a can of mushrooms. Also have a butternut squash in the oven. I can hardly wait until it's ready. Smells great.

I made a Pork and Black bean soup earlier today. It's really good.

For dinner I sauteed some boneless pork chunks and put some Chinese sweet chili sauce on top and simmered it. We also love sauteed cabbage, onions and carrots so I had that alongside.

Mexican Pork and Black Bean Soup

Shrimp and broccoli stir fry with white rice tossed with toasted sesame seeds.

Though it started out cold this morning, it ended up being a good evening to grill a couple of chops. We'll have zucchini patties and green beans with toasted almonds with the porkchops.

Chicken stir-fry with noodles and leftover apple crisp. It's a bit chilly here this evening and my arthritis is really painful. I don't feel like cooking a "four-burner dinner" as my friend calls it.

Omg we went to a seafood restaurant that specializes in Louisiana blue crabs. I had the boiled crabs and hubby had the seafood platter. These were the best sweetest perfectly seasoned crabs I have ever eaten.

Raven, if you don't mind me asking...what restaurant? I bought barbecued beef ribs and pork ribs from my favorite barbecue place. Also some potato salad, which I will doctor up because I like mine with a little more "stuff" in it. I ate a rib and a half....full. Jody isn't coming home, so will put it in the fridge for tomorrow.

I am in Louisiana, we were in Lake Charles. It is called Seafood Palace, 14th Street at Enterprise. It is a very casual place. And it is very popular we went early because on Friday by 6 there's a line to outside. We were seated immediately, when we left the line was definitely out the door down the sidewalk. I can't even explain how incredible these crabs were, very very full of meat.

Mine actually called for broccolini and a red chili pepper. Used the regular broccoli and left out the hot pepper.

I pulled a foodsaver bag of Ribeye Stew from the freezer. Yummy.

Chicken enchiladas tonight. Tomorrow we're going out with friends for Chinese buffet. Will make some chicken and wild rice soup (just asked DH if he picked up the rice, nope). So chicken soup, no rice, with leftover enchiladas on Sunday.

Raven, the crabs do look good. I just asked my husband and he said they are catching some really big ones and they really are full of meat. I may have to have some.
