What's for dinner, Monday evening?

This is our Thanksgiving weekend. I didn't make a turkey this weekend (I made it last weekend instead).

Gorgeous, perfect weather all weekend, average 21°C.

I tried a new pork tenderloin recipe with a maple syrup, grainy mustard sauce. I also roasted a bunch of vegetables--cauliflower, butternut squash, sweet potatoes and brussels sprouts. I also made mini meatloaves to have later in the week, while the oven was on.

This afternoon the girls, Amber, Alyssa and Cheryl planted mums and flowering kale in my yard. We also found a puff ball. Alyssa took it home for her supper. My supper was leftover chicken noodles and mashed potatoes.

Wow, your dinners all sound so good! I love the chicken in the slow cooker, steak, pasta sauce. Stir-fries are always good, and anything can be used in it. So versatile. Baked salmon and asparagus sounds delicious! I've got asparagus in the frig, that I'll either cook with orzo, or maybe roast it. We love it roasted. The last time we did that I made Angela's roasted asparagus breaded with breadcrumbs and parmesan. Thank you SO much for the best wishes guys. I just read them to him and he's touched. I know things will be good and he'll have a good recovery. This is a top-notch hospital AND it's all done by robot. Not laproscopy but a robot, not a human hand. He think that's very cool. LOL The time wearing the catheter and the recovery time is greatly reduced by choosing this method. And he's home the following morning, vs spending 3 days in the hospital with the traditional surgery.

Matti: Your meal tonight sounds like it would fit right in with your Weight Watchers program. How are you doing with it? Jasdip: You've had a busy few days. I like a good beef stew. I've never thought of mashing the two different potatoes together. But I will give it a try. Stacey: All those vegetables would be a real treat. I really like greek yogurt. Terri: I vote with you.........meatloaf. Georgysmom: Can you believe I've never gotten a roasted chicken from the store!! I'd probably want to sit down and eat half of it. Shirley, who is headed off to bed to watch tv, then go to sleep. I'm not a night owl by any stretch of the imagination.

Your dinners sound great!! Rhizo, barbecuing and fishing??? Wow. Carol, we bought a turkey on sale, because your T-Giving made me want a roast turkey. I'm planning to make a turkey pot pie; using biscuits as a topping vs a pie crust. A de-constructed one sounds good :-) Walnutcreek (good to SEE you!). Breakfast for dinner is a hit with many people! We like it. Shirley, burger and soup, nice healthy meal OF, greasy burger and fries, not as healthy as Shirley's ;-) but ultimate diner food. Ellen we love pasta, and made a great meat sauce on the weekend. Deeby, your potato salad sounds good, for the summer. It's easy to see you're in CA. LOL GM, I love quiche. Hubby won't eat eggs if they're hot (loves egg salad and deviled), so I seldom make it. I just have to do it and freeze it.

Terri, good luck with the shopping. So many choices these days but knowing you (huh?), you'll come up with something your family will love! Chisue, Stouffer's is my best friend these days! LOL! So I'd feel right at home. Sure hope your flight goes well. I was able to hold still. There really wasn't much to it at all. Thanks, I hope it's blah, too! YogaLady, this is your lucky day. However, I'm with your DH. I'm such a carnivore--probably that good beef, pork and chickens straight from the barnyard growing up in Indiana :-) Shirley, when I get my taste buds back and can eat a lot that I've already got in the freezer, I need to have a serious talk with you about cooking for one and how you manage to do it so well. I like cooking with the idea in mind of making different meals out of it. We are in for a cold front again, too. It was 75 yesterday and 70 today, but with the humidity, the air feels cooler.

This is all sounding good. Jasdip, your dinner looks perfect for the rainy afternoon we're having.

It's going to be leftovers here. I simmered browned pork blade steaks in liquid yesterday then had those with mashed potatoes and browned mushroom and onion gravy. Mixed greens with almonds and dried cherries, blue cheese dressing. There is plenty to do the same tonight if I make the salad again.

Leftover One-pot Mexican Quinoa. It was supposed to be a serving for 2 people but has turned into about 6 servings for me. I still have some left but need to pick up another avocado tomorrow on my way home.

We cheated... brought home baked chicken from our Fred Meyer. Was good and we added a small salad and re-baked potato. Beautiful Indian Summer-like days. Wish they would last awhile longer.
