What's for dinner, Monday evening?

This is our Thanksgiving weekend. I didn't make a turkey this weekend (I made it last weekend instead).

Gorgeous, perfect weather all weekend, average 21°C.

I tried a new pork tenderloin recipe with a maple syrup, grainy mustard sauce. I also roasted a bunch of vegetables--cauliflower, butternut squash, sweet potatoes and brussels sprouts. I also made mini meatloaves to have later in the week, while the oven was on.

This afternoon the girls, Amber, Alyssa and Cheryl planted mums and flowering kale in my yard. We also found a puff ball. Alyssa took it home for her supper. My supper was leftover chicken noodles and mashed potatoes.

I still say I'd like to be able to travel through cyber space so I could stop at each of your places to at least get a nibble of your evening meals. I had leftover pork/kraut/potatoes. For 'dessert', I had a Russell Stovers sugarfree caramel. Shirley

Mary, I had to look up what Pasta Fagiola was. It sure sounds healthy! Shirley, the weather was sunny all day here as well. Just loved being outside in it. Wendy's chili is a meal in itself and one of the most popular choices on their menu. You made 2 stops for your dinner! Hellion sliders with your healthy sides sure sounds good. Lots of good choices. I'd have the chocolate cake AND ice cream. Sue, I had oatmeal last nite! We're supposed to get more snow and cold temps again starting tomorrow nite. Susie, did you see Gadgets at McD's?? ;-) Kittiemom, I would love to have a barbecue. What kind of sandwiches did you do?

Glenda, that's a lot of food, but with all 12 bringing a dish it doesn't take long to fill up a buffet. I'm surprised there were no desserts! Raven, everything sounds delicious. We ended up having sliced avocados last night because the mangoes weren't quite ready. Way to go, Jasdip. You're making space in the frig for more of your good cooking! Shirley, I looked for green beans in the grocery today and they were awful looking. I wanted green beans and red potatoes so bad!! Yep, I think we all love our leftovers and most of the time I think they taste better on day 2 (or 3).

Matti: Your meal tonight sounds like it would fit right in with your Weight Watchers program. How are you doing with it? Jasdip: You've had a busy few days. I like a good beef stew. I've never thought of mashing the two different potatoes together. But I will give it a try. Stacey: All those vegetables would be a real treat. I really like greek yogurt. Terri: I vote with you.........meatloaf. Georgysmom: Can you believe I've never gotten a roasted chicken from the store!! I'd probably want to sit down and eat half of it. This is all sounding good. Jasdip, your dinner looks perfect for the rainy afternoon we're having.

It's going to be leftovers here. I simmered browned pork blade steaks in liquid yesterday then had those with mashed potatoes and browned mushroom and onion gravy. Mixed greens with almonds and dried cherries, blue cheese dressing. There is plenty to do the same tonight if I make the salad again.

Leftover One-pot Mexican Quinoa. It was supposed to be a serving for 2 people but has turned into about 6 servings for me. I still have some left but need to pick up another avocado tomorrow on my way home.

We cheated... brought home baked chicken from our Fred Meyer. Was good and we added a small salad and re-baked potato. Beautiful Indian Summer-like days. Wish they would last awhile longer.
