Grinding wheat...

Yes, I'm still trying to make an edible loaf of bread using 100% homeground wheat. It's getting better.

I've gotten non-GMO wheat on line, I'm trying to find some closer than Washington state, but this is what I got the last time:


I've taken to grinding the flour three times...


I'm getting the stuff to rise, it makes a prettier loaf and better texture...



I'm still working toward a more airy texture, bigger holes, so I still need to increase the hydration on this, and the crust is hard more than chewy, so that needs some adjustment too. I baked the long loaf on a hot baking sheet and spritzed the loaf with water after placing in the hot oven. I did the round loaf inside a hot cast iron dutch oven with the lid on, but found little difference in the crust regardless of the baking method. The flavor is better but still relatively bland, which is surprising given that it's entirely whole wheat. Maybe up the salt a bit.....
