canoe trip snacks--grab and eat by hand

I'm going on a canoe trip with my class tomorrow (Sun) and I wasn't going to bring anything other than granola bars for a snack, but the weather is going to be cold and I want more comfort food. But it has to be no mess, something to eat out of hand because we are not going to want to make a big spread, deal out of it. I'm toying with cold fried chicken, since it will be cold enough to hold through the trip. Not sure of anything else. Ideas?? I'm thinking maybe peanut butter and marshmallow fluff sandwiches or maybe with bananas and nutella, but don't know if they might be soggy by the time we pull them out. I wondering about maybe an apple, nut and cheese tray, I have some divided plastic storage containers I could use for serving. Ideas on what to serve and how to make it easy to eat? Kids will be bringing their own sack lunches, so this is just to compliment that, cold snack foods. I'm bringing cider and donuts for the van ride out to the river.
