Thinking of a Lacanche... opinions?

We are in the process of planning a kitchen remodel, and I have finally decided that Lacanche is probably the way we will go for the range. We were thinking Aga for a bit, but the service complaints that are EVERYWHERE, leaving it on all the time, and unclear repair records of the newer models, along with the lack of open flame, has pushed me away. I love the look of Lacanche, and love the versatility we could have in our choices. But I am soliciting opinions of owners:

We are somewhat limited for space, and Volnay, Cluny, or Bussy are the models we are considering. I love the idea of a warming drawer, I use a slow cooker all the time, and would love to be able to do that. I don't have a lot of experience with convection ovens, so I am hoping people will chime in with their thoughts on the vertical oven on the Bussy. For the Cluny and Volnay (which are my first two preferences) I am not convinced I would use a 18,000 BTU burner that often. I am intrigued by the French plate, but again have never used one, I am sure there would be a learning curve.

What brands of hoods do people have with their Lacanche? There are some beautiful curved hoods, we may use a hidden hood behind arched woodwork. Not sure if this would be sufficient?

Lastly, if we went with the Cluny, it looks like, from other posts that I have been obsessively creeping on GardenWeb, the temp can go down to as low as 200 F - have people used this for slow cooking? Looking to solicit opinions here prior to my calling Lacanche. Thanks all!

Love our lacanche volnay. Had it 1 year. Have a modern aire hood that's fine. Hardly use the 18k burner but would probably get it again over French plate bc have a French plate optional that comes with it.. Paired it with gaggenau combi steam oven so two ovens & warming cupboard. Great combo.

I have the Lacanche Changy 1400. It was installed 1 year ago. My husband and I both enjoy cooking on it. Would purchase it again. I have the warming cabinet, it was a must for us, use it all the time for keeping food and plates warm, proofing bread, etc.. Also have the french plate it is great for multiple pans and when not in use it makes a great landing surface on the range top. Best Hood which is framed in, very quiet with makeup air system. We own a cluny. What I think you need to ask yourself, is how much do I need each of these items. From your list, to my mind the least required would be a warming cupboard. We haven't had a microwave for ten years and interestingly, don't seem to miss it. FWIW, having a microwave at undercounter height doesn't seem any worse than an oven undercounter.

If it helps any, there's a 30 minute keep warm setting on the microwave drawer. Great as the warming cabinet is, I'm beginning to think it's a bit of new-toy-itis. You keep saying "I want two ovens". I think that means you want two ovens. More than anything else, you want two ovens. So get two ovens and go with the Cluny. For the convenience of others looking in the oven in the specs for the Cluny are: Gas oven : Enameled sheet metal. Dimensions W x H x D : 400 mm (15 3/4") x 305 mm (12") x 460 mm (18 1/8"). Thanks for all the input.. As far as the interior goes we have the second floor split into three equally sized rooms across the front.. There is 1 bedroom to the far left and 1 to the far right.. The middle is an open loft area.. Where the stone is on the front of the house it is actually set back 2 feet from the rest of the house.. So as far as the interior space goes I think it would work out if we decided to single them out.. Still on the fence but leaning on keeping them paired up.. As one poster mentioned I think it would make the room feel larger having them together..

Love your new blinds, both for adding more view and light to the interior and continuity with the siding to the exterior. May I suggest that you consult with other GW members regarding the sheers as side panels. I think you need a fabric with more "heft" to balance out the weight of your upholstery fabric. Hang the panels floor to ceiling just on the sides so that they just barely cover the ends of the blinds. Also, adding a fabric with pattern would bring some interest and life to the room. These suggestions may be out of your comfort zone but please check out houzz and gather opinions. Home Depot and Lowes are other options that have nice ready made side panels.

I have a Cluny 1400 which I've been using for abut 3 months. I love it! I use the warming oven for slow cooking, so I can't help you with your question about putting it in the oven.

I have the portable French plate that I find very useful, especially since I can also remove it and use the burners if need. I use the French plate mostly to keep food I've cooked on the stove warm before serving. But, it's also great for sauces and melting chocolate. The 18,000 BTU burner is useful for cooking pasta and boiling water quickly. It's also great for stir fry. But, I certainly don't use it as often as I do the 11,000 BTU burners. I especially liked that I could configure the burner BTU's on my range top. I went with additional 11,000 BTU burners.

I have Best by Broan hood line and makeup air system which is in a custom hood.

You should call Lacanche, they are very helpful and friendly and not at all pushy. I was also hesitant to call at first, but I'm so glad I did!
