Want to freeze small pears.

I have not had pears from this tree for a few years, but my Son brought some in the other day. Being alone, I could not climb myself. I remember when we planted the tree, I think they were supposed to be Bartletts. Anyway, they are hard as a rock even though they had pink on them. So I assume I would have to cook these and fix a light syrup. Just not sure how to handle this, and there will not be too many,I am sure. I am not in a position to can and really don't have that much. Would it be better to pressure cook them? Thanks so much. The people on this forum are so much help to me. Barb

If pears are anything like apples, they should freeze well. I just slice my apples, dip in lemon water to prevent browning, drain and freeze. If your pears aren't ripe, then maybe you might have to cook and sweeten them, or let them sit on the counter or in a brown bag to ripen.

Wobur: Glad to hear you are getting some good fruit. After our last discussion, I was thinking you may have too much late frost to grow anything. I have had some problems here with small fruit on my outdoor plantings, mainly with apple. Fruit is much larger this yr. I applied more N fertilizer and more water. But that can have a downside, the fruit may not taste as well. In your case, I'd try thinning even more aggressively where the fruit is small. Asian pears in particular require a lot of thinning. Would you mind telling me about where you live in CA and what your elevation is? I like to look up the weather records for places like yours just to have an idea how things work in various climates. In my new 8 by 14 lean-to GH, I have two open windows into the house with a small window fan circulating air continually. This allows me to not have to vent and waste hot air to the outside as well as help moderate temps. I added one of the small oil filled electric radiators listed above, trying to keep the temps above 55 at night. With the radiator, continual fan and 15 hour a day lights, I was worried how crazy the electric bills would be - could end up with some expensive tomatos. But after the the expense of building the GH and loving growing the plants, I would not have changed a thing. I did turn the thermastat down in my home to help compensate for the added GH. I just got the first electic bill since adding the heater. I used 3KWhours per day less this month than the same month last year. We have a d'Anjou cross, and the pears will store at cool room temperature for quite a long time. With the fruits that have issues, you can make "dessert pears" by barely covering cut chunks with a light syrup, bring to simmer, then freeze. These are great with a bit of whipped cream. Look for a subtle change in the color of the pears, away from green and toward yellow, and harvest away. I also look for fruits starting to fall, another sign to harvest. Also you can cut into the pears and see if the seeds have started darkening. Good luck -- I love working with pears.

Barb - while this is not what you are asking, I thought I'd mention it. I learned while working with an orchard that pears actually ripen off the tree. If I remember correctly, some varieties benefit from cold storage too - like refrigerate the pears for a week or so, then take them out and leave them on the counter. They should soften up and ripen to a wonderful, juicy pear. This link might help.

Agree with ekgrows. The pears should soften if left on the counter if you want to eat them fresh. Of course freezing them as they are (using instructions in the link Dave gave) will cause them to be softer once thawed.
