Hardwood flooring questions.

I’m trying to decide about putting hardwood in the
kitchen. I feel it would look best to
run it through the whole house. (You know I’ll end up painting those cabinets then because then it will be too much stained wood for me, ha.) Plus I'm not wild about tile and I don't know if brick is practical or right for our house.

At some point in the later future when the kitchen
gets remodeled how does that work with the hardwood? My guess is someone would have to come in and
piece the flooring and stain to match – which sounds miserable and that you certainly better have the right person. If we did install it now would you
remove 6x3 island to run it under there?

If we added it to the kitchen later how hard will it be to match the rest?

I’m planning to use white oak and like this color. This just has poly over. I also like some pics of Gunstock stain.

I know oil poly
ambers over time. How orange will it be
in years to come? Should I go with water
based?

I also don’t want a bunch of short boards, but what length
and size is correct? DH wants site
finished, but I don’t think he put much thought into that. I don’t see us moving out for any length of
time for it to be completed so it will most likely be prefinished.
