Apologies to St. Patrick

Not even the corned beef was done the traditional way. It
was sous vided. I didn't see eating boiled potatoes and cabbage, instead, nice
spring asparagus and Mac & cheese. I did add a drop of green food coloring
for the occasion. :-)



Pork & beans. They say it is not possible to plate pork
and beans. That didn't stop me from trying. What does pork have to do with St.
Pat? Nothing, other than the fact that I used the corned beef juicy to brine
the pork.


One guest didn’t eat pork and beef, so she got stir fried
chicken breast with pickled cabbage and cantaloupe rind.
