Induction/Gas cooktop question

I posted a question about this last Tuesday, but it was probably too
long and rambling, because I didn't get a response. Or maybe I posted in the wrong place? Anyway, I've done
more investigating and now I've got another idea.

I am looking at the Wolf 24" Induction Cooktop, which I like because it offers one large hob and two smaller ones that can be "bridged" to use together.

I
want to install a 2 burner gas unit beside it. I need the gas because
we regularly lose electric power in the Winter - it needs to function
with propane & be lit without electricity.

Can anyone give me an opinion of the Wolf cooktop? Any suggestions for the gas unit?

I'd
like to keep the width to 36" total, but if I can't install them right
next to each other, I could adjust things to create a landing space
between them. Of course, I'd need a wider vent hood...

I also
considered the Bertazzoni segmented cooktop, but read some bad reviews.
It also doesn't have the "bridge" feature that the Wolf offers.

Thanks to all you wonderful contributors I managed to save $2,000 on the Bosch double oven that I want by looking at the Sears outlet. Otherwise I wouldn't be considering the Wolf at all!

Anne, I saw your previous but didn't answer because I don't know much about the hybrid units except that they're mostly designed for difficult places to live where both the electricity and gas delivery are iffy. You're in a similar situation with the electricity, of course, though your propane deliveries are probably pretty reliable. You can light most gas cooktops with a match or lighter (a pistol style lighter, or any kind with a long nose, is a safer choice).

I have 24" (Gaggenau) induction, which has a similar configuration to the Wolf, and the 15" Wolf 2 burner gas under a 48" hood. There's about 4" between the two. Big enough for a spoon rest and the pepper grinder. You could certainly make it wider. You'd have to ask Wolf how close together they could be. Modular cooktops usually only need about an inch because they have a piece that links them together. I don't know if it would work with the 24" induction, though. It may require a more secure side brace. It's worth making sure that it's secure enough to handle big heavy pots.

I like my Wolf gas cooktop. It has a medium and a small burner. I find them adequate. But I have the induction for more high powered cooking. I mostly use the induction. There are a few things I prefer gas for, and I use it when I need more burners. When we have had power outages, they've been local (less than 1000 houses), so it has been wiser to go hang out where there's power, a few miles away, than open the fridge and letting out the cold air. The food is good for at least a day if you don't open the fridge. I did light it once with a lighter, though I forget why. Maybe it was an outage. Perhaps we were making tea. I wouldn't want to do all my cooking on it. It's a small space. But for a few days here and there, and for meals rather than artistic expression (i.e., stew not crepes), it should be fine. It's a heck of a lot better than a camp stove!

Choosing a layout should be done in the context of the cabinet construction and strength of the countertop. I would separate two units to fit the cabinet layout and to provide room for cabinet walls to supply sufficient strength for stone support between them. Alternatively, the cabinet can be designed with an adequate counter support beam between them and otherwise be open below the gap. What is needed will depend on how heavy the units are and stone strength, if a stone countertop is to be used.

And yes, this costs more hood, more blower, and more make-up air.

You got an excellent bargain on the oven. Do call Gaggenau and see if they'll honor the warranty. Congrats! Mine was FedEx'd from England. I think it was $70 U.S. duty, plus $5 for FedEx to handle the paperwork. Since you'll be carrying yours as luggage, you should be paying (if it hasn't changed) according to the following equation, with the price in U.S. dollars of your cooktop being X: duty=.03(X-800) That should be a lot less than import duty. That is, assuming that there isn't special duty on hand carried electronics or some such. If there's VAT in Germany, ask the store if you can have it waived since you're taking it out of the country. I don't know if you've seen the caveats. For your self-imported cooktop, you should get a letter from your insurance company saying that they know it's European rather than UL approved and that that doesn't affect your policy (mine said so long as it was installed by a licensed electrician). Also, you should make sure your building codes don't specify UL. If they do, you'll need a waiver. The Euro certification is just as good as UL, but you want to make sure that you have all the bases covered so they can't use a technicality to weasel out of the help you'd be given if there's a fire or something (like from a lightning strike). I'm also in California but local codes and inspectors vary. Do check with the airlines about the measurements they allow as well. It should be fine. My cooktop would fit, with its original box, into my old large pullman suitcase. I'm not sure about the newer ones, but it's the three dimensions added together they go by, with a maximum diagonal, so I think that part will be fine. Actually, if you have an old large pullman case, you might consider taking it, with some old towels or rags, and bring home the cooktop in the case, with the cloth for padding, instead of having to get an outer box and peanuts. Worse comes to worst, you can always send it FedEx. :)

The window itself isn't a problem if your local code allows it. The window might make your hood higher than optimal however, and it can be dangerous reaching across hot pots to adjust the window. With induction you won't set your sleeve on fire, though. Moving the ducting for your hood might well be a bigger deal than moving the gas. The best way to know is to talk to your plumber and HVAC guy and get estimates from them. A range is usually the less expensive route. Plus, if you don't already have induction capable pans you'll need to budget a bit more for cookware (though sometimes they give a few pans away with the cooktop). Most people here report back after changing from gas to induction that they'd never go back. A few miss their gas or actually do change back. Most of the reasons are in the realm of it being too weird cooking without fire or otherwise missing the flame, or having trouble adjusting to setting the temperature by number rather than sight (flame height). Have you tried getting advice on your layout in the Kitchens forum? If you did, and didn't get much response, try again.

I have a Bosch 30 induction. I don't remember which hobs have which power, but, I do boil a small serving of pasta in my 2 qt. saucepot in the blink of an eye, almost. I cannot lift heavy expensive cookware and my relatively low cost stuff works perfectly. No buzz. I lift and swirl and it doesn't shut off. It is true that folks just have their preferences. Some just like flames. Maybe they appreciate their cooking more if they are sweating. (Food Network chefs sweat a lot) I have a new gas stove, 2003, at our vacation cottage -there is no comparison. But, we don't cook much at the cottage. The only advantage to gas would be to char a pepper, wok or cook during an outtage. My Shanghai born dil is a superb cook and uses large skillets, no woks. In my case, having a zip-zip cleanup, without soaking or scrubbing grates, would overwhelm any gas advantage. I prefer not to sweat during cooking or cleanup. And not smell gas.

I just spent a month in an English rental house, with an induction cooktop - definitely NOT high end appliances, just considered standard, basic. However, I found it immensely frustrating to use, compared to gas, because of the controls (which - along with cost - was the reason I didn't want one in my US kitchen). Gas: simple knob: I can watch the flame as I adjust the knob, and know precisely how it's doing. All the induction cooktops I saw, including this rental one, use touch-sensitive controls. For me, they just aren't 'sensitive' enough. They automatically powerered on to '5' (or '9' on some models) and you then have to 'touch' them up or down to wherever you want. So, I have to watch the stupid light display, instead of my cooking. And if I overshoot, I have to fiddle around all over again. I had wondered whether I'd get better at it with practice, but after a month, cooking daily, it was still a pain for me (and my DH) to use. I love the idea of induction, and if I had to go back to electric, I would have one - provided it had knobs (I think the Viking one does). With a gas supply - there's no contest. Gas every time. (Incidentally, natural gas in parts of Europe is fairly cheap. It's because natural gas is found in the North Sea and piped to both the UK and Scandanavia. Not dependent on Eastern Europe at all.)
