We will have leftover enchildas. I am the leftover queen. I am working Mon., Tue., & Wed. this week so on I made 2 pans of enchildas on Sun. & we will have enough for Wed. also. I know I sound lazy but it works for us. My husband loves meatloaf!

I have bridge tonight so I'm just heating up some chicken noodle soup. Not DH's favorite so I think he'll have some clam chowder. Wish I had some of Raven's crusty bread on hand to go with it, but I didn't think of it ahead of time. Just put it all together for tomorrow. I have Mexican train here again tomorrow night (I had another group here last night) so I'm going to pick up some ham for sandwiches tomorrow night on that delicious crusty bread.

We will be having a pasta florentine. It's a recipe from years ago that hubby loves. It uses ground pork, a white cheese sauce, tomato sace, noodles and spinach. I don't love it and it's a lot of steps, so hubby is making it.

Beef stew in the crock pot. I found a bottle of Bristol Cream that someone must have brought at the holidays, so I looked up uses for it, and a little drop in the stew towards the end of cooking is one of them. Going to give it a whirl. My stew isn't real sweet, so it should be okay?

DH is eating left over ribs from last night. I get to go to town for yoga, so a salad or a smoothie for me tonight.

I have a pork roast that I stuffed with lots of garlic cloves and onions in the oven right now. We will have rice to go with that wonderful brown onion gravy and some green beans sautéed in olive oil and balsamic vinegar with sliced garlic and sliced fresh mushrooms.

I have been outside all day. My wonderful neighbor called and said she wanted to work on my front flower bed today. She loves to be in the garden and her yard is all done so she comes over and works on my beds. I just can't thank her enough because I can't do that kind of stuff anymore. I kept her tea glass filled up and helped where I could. It looks so much better already. It was 76 today and partly sunny, humid but breezy, so good working weather. We should be able to plant soon I hope. She wants to help me with the atrium this time too. I have always done it myself with a little help from hubby. So that will be fun.

I keep them well fed with sharing my meals with them and taking her to lunch. I love those kinds of great neighbors. What a blessing.

My weather is about like Shirley's, ice, snow and rain. My supper is a quick one. Leftover pork and gravy, mashed potatoes, peaches and cottage cheese. Iced tea to drink.

Nuttin special. Meat Loaf...Cheesy Potatoes...Peas n Carrots

Mostly leftovers here, too. I'm going to make a mixed grains/rice/chopped veggies dish to use with the left over chicken from last night. Will probably cook some kale, too.

I put a pork roast in the crock pot, white rice on the side and pan fried eggplant.

We had sloppy joes over panini rolls and a salad. At 7 I'm going to put some potatoes in the oven to have tomorrow or the next day.

Leftovers! It's our choice of red beans and rice, fried rice with chicken and veggie bits and/or beef stew.

Chop, scalloped potatoes, green beans, and cottage cheese. No leftovers tonight!!

Janey: I don't call cooking extras for leftovers being lazy. That's very smart. I do it a lot.
Georgysmom: I'd like both of your soups. Sandwiches for tomorrow sound like an excellent choice.

I made a couple of english muffin pizzas with homemade tomato sauce, sliced mushrooms, pepperoni, and mozzarella and parmesan cheese.

Well gadgets, I tried the Bristol Cream. Just a couple of tablespoons (the recipe, which wasn't all that different from mine, called for a 1/4 cup...I was making a smaller recipe so I used less) I don't know if it was my stew or the sherry, but it wasn't as flavorful as usual. So I will try it again next time and make sure I season properly. I saw another recipe that called for adding the Bristol cream while browning the meat, so maybe I will try that.

Loving all the leftovers posted, they are my favorite. For some reason I can generate as many dirty dishes getting the leftovers ready as cooking lol! But DH usually has them for lunch.

We had the same ugly weather yesterday. Snow (I shoveled twice), and freezing rain. All kinds of accidents and cancellations throughout the region.

We love leftovers! I seldom make just enough for one meal.

Shirley I made a baking dish full of white and sweet potatoes, threw in a head of whole garlic cloves and drizzled lots of olive oil. We love these. I took out some chicken breasts for dinner Wed nite and I'll just nuke some of potatoes to go with it. By waiting until 7 to use the oven, the hydro rates are cheapest.
