Meat loaf

Can I fix a small meatloaf in my slow cooker to cook overnight?Should I mix in it the bread and milk and do you put the topping on it? I always mix brown sugar, mustard, onions and catsup and smear all over it. Do I put in any moisture, or does it make its own juice? Thanks Barb

The link below has a similar recipe using a slow-cooker, with a couple extra ingredients, but that might be a good guideline for time needed for slow-cooker - IF you use the same amount of ground beef.

I would say "overnight" could be too long, especially if you use anything under 1-pound of ground meat. AND, it depends on what your "overnight" consists of. Overnight for me is 6-hours because I go to bed at 9 p.m. and get up at 3 a.m.

You could also bake your meatloaf in a 6-cup (regular or jumbo-size) muffin tin in the oven or toaster oven for individual servings, and you'll find recipes for that on-line. Probably one that is very similar to yours.

I agree with Grainlady. A meatloaf doesn't need to cook all nite. Why do you want to cook it overnight, so that it's done during the day? To reheat I suppose? It wouldn't firm up in a slow cooker either I don't think, so it would be difficult to slice and serve, but that's just my opinion.

I have made it in a muffin tin, and it cooks much quicker than a full loaf. If time is an issue, try making it this way.

I like pepper jack with anything. Makes a great cheeseburger, too. If you want to make your own sofrito, try this: SOFRITO (about 1 1/2 cups) 1/3 cup minced smoked ham 1/3 cup olive oil 6 garlic cloves, minced 1 small green bell pepper, seeded & minced 3 sweet chili peppers, seeded & minced 1 small onion, minced 2 tsp chopped fresh oregano 2 tsp chopped fresh cilantro 2 medium tomatoes, chopped 1 TBL tomato paste Salt & pepper to taste Saute the ham, garlic, peppers & onion in the olive oil for 3 minutes. Reduce heat & add remaining ingredients, cooking gently for 20 minutes.~~Taste of the Caribbean Use it on fish, chicken & rice dishes. OK for a couple days in the refrigerator in a glass jar.

I like Rachel Ray's version. She has all the regular ingredients, but you take a cup of salsa and 1/2 barbeque sauce mixed together. Plus grill seasoning to give it a kick! My DH hates ketchup so it's a good compromise. She cooks it in a cupcake pan for individual servings, but I think it makes a total mess that way. I have made them into meatballs and cooked on a broiler pan to let the grease drain. I also have used ground turkey to lighten it up!

Yes, a meatloaf can be made in a crockpot, and I've done it, although I'm not a huge fan of meatloaf. The recipe I use calls for garlic, onion, chicken broth, eggs, parmesan cheese. The broth and seasoning goes in the blender so there are no chunks, and then everything gets mixed and shaped. I grow grassfed beef so there's not fat, my ground beef will stick to a pan, but the broth and eggs keep it moist. I top it with a mix of catsup, brown sugar and vinegar, straight from America's Test Kitchen, my girls loved that stuff. Anyway, cooking time will vary depending on the crockpot, but I cooked mine on low for 4 or 5 hours. I put the topping on when I first put it in the crockpot, so it could bake on a bit. The only problem was that it was not loaf shaped, so it was hard to cut into sandwich sized slices. That was before I bought the small Nesco, now I'd put it in a loaf pan and put it in the Nesco roaster... Annie

I've smoked meat loaf many times and would not recommend leaving it in the cooker overnight. What you'll find in the morning will be a brick of dry meat suitable for paving your driveway.

I consider myself chastised for saying I was going to cook the meatloaf all night. I have several times put on a small roast and vegetables to cook so that when I come home from church, I have a meal already cooked. That usually is a cheaper cut of meat because I like my meat to be falling apart tender,along with carrots, sweet potatoes , onions, etc. The purpose with the meatloaf was to have it available in slices for the future. I have made the statement that I don't live to eat but eat to live. Cooking has not always been my lifetime ambition, and I am a mediocre cook at the best that has become addicted to healthy cooking. Considering the fact that that my Mom wouldn't let me in the kitchen in case I would mess it up, and I only got in on the dishwashing, laundry and ironing part of housekeeping, I have managed to get along for quite awhile. I pleased my other half, though. My husband is the one that taught me how to cook. Barb
