Comments (9)Hubby's old family recipe has chili sauce spread on top. I think it would work very well inside the loaf as well. Here's his recipe in case you or anyone might want to try it. He makes it with 2 lbs. all ground beef instead of using pork and veal. Twin Meat Loaves * 1 lb. ground beef * 1/2 lb. ground pork (or ground beef) * 1/2 lb. ground veal (or ground beef) * 2 tbsp. finely chopped celery * 1/4 C. finely chopped onion * 2 tsp. salt * 1/4 tsp. pepper * 1/4 tsp. sage * 1/4 tsp. dry mustard * 1/4 tsp. poultry seasoning * 3 slices soft bread * 1 C. warm milk * 2 beaten eggs * 1 tbsp. Worchestershire Sauce * 1/2 C. dry bread crumbs (fine crumbs) * 1/2 C. chili sauce * 1/2 C. boiling water Thoroughly mix meats (unless you're using all ground beef). Add onion, celery, and seasonings. Cube bread, soak in milk, eggs and Worchestershire Sauce; beat with rotary beater. Combine meat and egg mixtures and form two loaves. Roll each loaf in bread crumbs and place in greased baking pan. Spread chili sauce on top of each loaf. Pour water around the base of the loaves in the pan. If you want to make your own sofrito, try this: SOFRITO (about 1 1/2 cups) 1/3 cup minced smoked ham 1/3 cup olive oil 6 garlic cloves, minced 1 small green bell pepper, seeded & minced 3 sweet chili peppers, seeded & minced 1 small onion, minced 2 tsp chopped fresh oregano 2 tsp chopped fresh cilantro 2 medium tomatoes, chopped 1 TBL tomato paste Salt & pepper to taste Saute the ham, garlic, peppers & onion in the olive oil for 3 minutes. Reduce heat & add remaining ingredients, cooking gently for 20 minutes.~~Taste of the Caribbean Use it on fish, chicken & rice dishes. Comments (4)I consider myself chastised for saying I was going to cook the meatloaf all night. I have several times put on a small roast and vegetables to cook so that when I come home from church, I have a meal already cooked. That usually is a cheaper cut of meat because I like my meat to be falling apart tender,along with carrots, sweet potatoes , onions, etc. The purpose with the meatloaf was to have it available in slices for the future. I have made the statement that I don't live to eat but eat to live. Cooking has not always been my lifetime ambition, and I am a mediocre cook at the best that has become addicted to healthy cooking. Considering the fact that that my Mom wouldn't let me in the kitchen in case I would mess it up, and I only got in on the dishwashing, laundry and ironing part of housekeeping, I have managed to get along for quite awhile.
