Pocket doors between kitchen and dining room or open concept?

We are remodeling our cape. We've just demolished some walls and expanded our kitchen from 11' x 13' to 16' x 13'. One wall that came down was between the kitchen and dining room. I'm trying to figure out right now if we should add pocket doors between the kitchen and dining room. Our dining room is shrinking from 14'8" x 13'2" to 11' x 13' 2" to accommodate a walk-in pantry and coat closet. The opening for the pocket doors can only be 5' wide since the doors need to be concealed within the walls. I would like the option of closing off the spaces, but my family wants it completely open..... Any thoughts on this would be greatly appreciated.
