Gluten free flour

Next up, I'd like to make my apple pie cake using gluten free flour. Anyone have a good gluten free flour that will be good in a cake recipe?

There is not a lot of batter to this recipe which I guess is why they call it a pie cake, so I think it could convert well to gluten free. (Hopefully)

How much total flour? That will make a bit of difference, also what is in the rest of the recipe.

Do you want a recommendation for a brand of flour, or do you want a recipe for a gluten free blend?

The one I've found that works best for me so far is King Arthur, but I haven't tried blending my own yet.

Terri- Do you have the book, "Cooking with Coconut Flour"? I use many recipes out of that book. I also use Chana dal (immature garbanzo beans - looks like split peas) instead of garbanzo beans because they are low-glycemic and don't raise blood sugar and are milder-tasting than garbanzo beans. They can be milled into flour and used instead of garbanzo flour. You usually find garbanzo bean flour mixed with fava bean flour. You might try your GF Mix in these recipes instead of the white sorghum flour since it takes so little and the peanut butter in the first recipe, and the almond flavoring in the second, might mask the bean flavor. These are a couple of my original GF recipes. WHITE SORGHUM PEANUT BUTTER COOKIES 1/2 c. Natural Peanut Butter 1/2 c. butter 1/4 c. white sugar 1/4 c. brown sugar 1 egg 1/2 c. white sorghum flour 1/2 c. dried potato flakes 1/2 c. flaxmeal 1/2 T. cornstarch 1 t. baking soda 1 t. baking powder 1/2 t. salt Preheat oven to 350Â°F. Line cookie sheets with parchment paper. In a large bowl, beat butter and peanut butter with an electric mixer until light and creamy. Add the sugars and beat until fluffy. Beat in the egg just until mixed. In a medium bowl, combine the white sorghum flour, dried potato flakes, flaxmeal, cornstarch, baking powder, baking soda, and salt. By hand, mix into peanut butter mixture, only until ingredients are incoporated. Refrigerate dough for 20 minutes. Using a portion scoop, make dough into 1-inch balls. Place on prepared cookie sheets and press with a fork dipped into turbinado sugar. Bake 8-10 minutes in a preheated 350Â°F oven. Remove cookie sheets from the oven and allow the cookies to rest on the sheet for 1-2 minutes, then remove to a wire rack to cool completely. WHITE SORGHUM and ALMOND FLOUR COOKIES 1/2 c. butter 1/3 c. brown sugar 1 t. almond extract 1 egg 1/2 c. white sorghum flour 1/2 c. almond flour 1/4 c. dried potato flakes 3/4 t. baking powder 3/4 t. baking soda 1. Preheat oven to 350Â°F. 2. Cream butter. Add brown sugar and blend until light and fluffy. Add almond extract and egg. Beat well. 3. Stir dry ingredients together and mix well. 4. Mix dry ingredients into creamed mixture and mix only until blended. 5. Allow dough to chill in refrigerator for 20 minutes and keep in refrigerator between use. 6. Shape dough into 1-inch balls and place on a parchment paper lined sheet. Press dough balls with a fork to flatten slightly. Bake for 10-12 minutes, or until lightly browned and set to touch. 7. Allow cookies to sit for 1-2 minutes on baking sheets before removing and place on a wire rack to cool. Yield: 33 cookies -Grainlady

I have made this white cake for years.....but not FOR years if you get what I mean....what I mean was that it was an old favorite when I baked birthday cakes more often. ICE CREAM CAKE 2 cups sugar 3/4 cup butter 2 cups sifted flour 3 tsp. baking powder 1 cup sifted cornstarch 1 cup milk 1 tsp. almond or vanilla extract 5 stiffly beaten egg whites Cream sugar and butter together. Sift the flour, baking powder and cornstarch together. Alternate adding these to creamed mixture along with milk. Beat until very smooth. Add vanilla and then fold in egg whites that have been beaten until stiff. Bake in 2 greased and floured 8" round cake pans for 25 to 30 minutes in a 350 degree oven. Frost with Boiled White Icing. Or....since he specifically asked for "vanilla cake, I might fill with a vanilla pastry cream and then top with that frosting where you mix egg whites, sugar and syrup in a double boiler and cook beating all the while until it's thick and holds it's shape Here's what I have for a flourless chocolate cake.....came from this forum many years ago... It is kind of like a cake textured hot fudge sauce served in slices. VERY rich - so cut in thin slices. Add chocolate and stir until mixture is smooth and chocolate is melted. Remove from heat and cool slightly. Whisk the eggs and additional yolks in a large bowl until frothy. CAREFULLY fold into the chocolate mixture. Pour batter into prepared pan and place on a heavy baking sheet. Bake in the preheated 325 degree oven until the edges puff and crack slightly but the center is not quite set. Transfer to a rack and let cool. Cover with foil and refrigerate overnight. to remove from pan, dip a sharp thin knife in hot water and run it around the sides of the pan to loosen the torte. Carefully release and remove the pan sides and the parchment. It will have cracks in it, but this is normal. Sprinkle lightly with powdered sugar (if desired) and cut into very thin slices with a sharp knife dipped into hot water, taking care to wipe the knife after each cut. Serve with whipped cream if desired. Many servings.

Wow, you folks are awesome, thanks so much for taking the time to post ideas and recipes, I really appreciate it. I'm going to ask tonight if eggs/egg whites are on the OK list because those macaroons are a great idea (and are a favorite of DH as well). Gluten is a protein found in wheat, barley and rye. It's also found in spelt, I've just learned. So all of those products are out, along with a laundry list of other foods that seem to cause her stomach to cramp up. I love to bake - bread a couple of times/week, cakes, cookies, pies, etc. I feel badly for my neighbor as she's basically given up on all baked goods, which is why I thought I'd see if there were any possibilities for her that she might have overlooked. publickman I've brought quinoa salad a couple of times and am not a huge fan, but it's a good fallback. bons thanks so much for the recipes. The brownies and macaroons look great (assuming eggs are ok, I'd have to leave out the nuts) but the 3rd recipe won't work as was pointed out (milk). mom4j47 yes, this is pretty drastic and not by choice but for health reasons. My neighbor gets very very sick when she eats something not on her OK list. All veggies and some fruits are always welcome so I often bring those. Annie I'll check out the cornbread recipes (and ask her if cornmeal is ok). The meringue cookies look good although no nuts. dcarch thanks for the hint about Asian groceries, I've got one nearby. I have no idea how to use these flours though - anything you can share about them? Wild rice is a grass and as such it's on her OK list. I haven't seen wild rice flour (if it even exists) but I've got a really good recipe for a wild rice salad (includes dried cranberries and almonds) that I could bring sometime, with the almonds on the side. cloud_swift the cholo tiki recipe looks delicious - I know DH would love to try that. Teresa yes, rice just an additional food she is sensitive to, which makes things difficult since it's often an ingredient in gluten-free flours and foods. tami_ohio thanks for pointing out www.diningdownloads. Jessica thanks as well, I'll ask about corn meal because your recipe looks great. cynic I'm going to see her tonight and so will ask about all the ingredients I'm not sure of. I didn't realize flour residue hangs around. She loves the gewurztraminer that DH brings on occasion, so arriving with baked goods is not really all that critical. Her basic approach is to make a soup that she knows she can eat and assume that any other contributions from guests are not going to be something she'll be able to have. If the contributions fit her diet, it's a bonus. This has been a real education for me, both in getting to know this neighbor and in all the posts here. Thanks again to all who commented.

I love broccoli or cauliflower with cheese sauce! BROCCOLI AND CHEESE SAUCE (Food Figure) 1-2 heads of broccoli 2 tbsp flour 2 tbsp butter 1-1/2 cups low fat milk 3 ounces grated cheddar pinch of fresh nutmeg pinch of cayenne salt and pepper to taste Cut your broccoli into bite sized pieced and place them into a steamer. In a small pot over medium-low heat create a roux by adding the butter and flour. Cook this for about 2-3 minutes. Add the milk, about 1/4 cup at a time, stirring with a whisk. Adding the milk in small additions will help prevent any lumps in the sauce. Add a pinch of freshly grated nutmeg and a pinch of cayenne pepper. Bring to a boil then reduce the heat to medium-low and simmer for about 10 minutes. Turn off the heat and add the cheese, stirring slowly until its melted. Season with salt and pepper to taste. Place the steamed broccoli into a serving dish and pour the cheese sauce over top. Serves 4.

My favourite GF flour for cake is sorghum flour, often mixed with tapioca starch or flour. I also use almond flour regularly. You'll want to do a mix, there are many sites online that will walk you through the variants. Xanthum gum is a must to add to the mix as well.

There are good pre-made mixes on the markey, but most have rice flour as a base. I prefer a sorghum or almond flour base.

Apple Pie Cake

6 Granny Smith apples
1TBS cinnamon sugar
3 large eggs 1 1/2 c superfine sugar
1 1/2c vegetable oil
3 tsp vanilla
1 1/2 c flour
1/4 c cinnamon sugar for top

350 degrees
Grease spring form pan. Layer apples. Sprinkle with 2 TBS cinnamon sugar over apples.
In bowl, beat eggs and sugar until fluffily.
Add oil and vanilla. Fold in flour.
Pour batter over the apples. Let sit 10 minutes.
Sprinkle 1/3 cup cinnamon sugar and bake 1 hour 20 minutes.
It was actually done in 70 minutes in my oven.

How should i tackle the flour to make this recipe gluten free?

The best way to substitute is to find a recipe that is actually gluten-free to begin with. Until you are familiar with some of the science and different characteristics of ingredients you use as a substitute, you risk a lot of recipe failures and wasted food.

All-purpose mixes don't always work like all-purpose flour, and different brands/blends work differently from each other. For instance, Bob's Red Mill GF All-Purpose Baking Flour has a strong flavor of beans because it's first ingredient is garbanzo beans. CUP4CUP's first ingredient is cornstarch which can leave your tongue feeling like it's coated. King Arthur GF Multi-Purpose Flour tends to have good reports for performance for good structure and has a neutral flavor and the first ingredient is white rice flour.

As a personal issue for me, when you switch to gluten-free flours and foods, you may also want to consider the amount of arsenic you are exposing yourself to by increasing your use of rice and/or rice flour. Many of the gluten-free flour choices are also high-glycemic, which means they can cause blood sugar to spike, which is not a good thing for someone who has blood glucose issues (pre-diabetes, diabetes, etc.).

Check out the recipe below for Gluten Free French Apple Pie and see if it would work for you. It will certainly be much lower in fat. A cup and a half oil in a cake recipe is a LOT! If you don't want to make it in a pie pan, use a square or rectangle baking dish with the same volume as the pie recipe. I make a low-carb gluten-free version of Impossible Pumpkin Pie and always bake it in a square pan instead of a pie pan.

You will find Gluten-Free Bisquick available next to Bisquick products, but I make my own high-fiber version:

For one cup:
1/2 c. almond flour
1/2 c. hi-maize resistant flour
1-1/2 t. baking powder
1/4 t. salt
1 T. coconut oil
Cut fat in flour mixture. Use cup-for-cup in recipes that call for Bisquick. [Grainlady note: I use an electric hand-held mixer for this task.]

Another good Gluten-Free Bisquick substitute:
2-1/2 c. Pamela's Baking & Pancake Mix
3/4 c. butter or shortening (I would use coconut oil.)
Cut fat into flour mixture. Use cup-for-cup for Bisquick.

Ellendi, Here is a link to an Italian Apple Cake that uses almond flour that is very similar to your cake recipe. I have made it and after reading the comments, I used 2 cups of almond flour and it came out perfectly for me. This cake also did not need xantham gum.

Ellendi, Jules gf flour blend should work well in this, though it's not the healthiest choice. At 100% starch, there's almost no food value, and it will spike blood sugar levels - at least in susceptible individuals.

Granlady, this cake is for my daughter who had decided to go gluten free. She will not be eating my cookies this year so I want to make something she will eat. When I make cake or cookies etc. it is a treat and not meant to be a healthy choice. Nothing worse than a dessert that just misses the mark.
Tish, that cake does look very similar. Why did you increase the flour?

I sent a Christmas platter of these gluten-free cookies to work with hubby. By using palm sugar, anyone who is diabetic can "indulge" as well. Four people asked for the recipe.

PEANUT BUTTER CRUNCH COOKIES
Melt together:
1 stick of butter
3/4 c. smooth peanut butter
Cool enough so the remaining ingredients don't melt or the eggs don't cook.

With a mixer add:
1/2 c. palm sugar (or brown sugar)
2 eggs
Blend well.

Add:
1/2 c. almond flour (or all-purpose flour if not gluten-free - I prefer Honeyville Grain almond flour)
Mix well with the electric mixer.

Add: (you can do this by-hand or with the mixer)
1 c. unsalted dry-roasted peanuts
1/2 c. sunflower seeds OR pumpkin seeds (your choice)
1/2 c. mini-chocolate chips
1/2 c. unsweetened coconut
1/2 c. cacao nibs (optional)

I use a #50 portion scoop, which is about 1 T. of dough, to make the dough balls. Press the dough balls down slightly. Bake in a preheated 375-degree F. oven for 12-15 minutes. [Note: I line the baking sheets with parchment paper and the recipe usually makes two full sheets of 20-cookies per sheet.]

Ellendi, there were a few comments about the apples sinking. Almond flour does not absorb a lot of moisture so I figured the cake needed to be a bit denser to support the weight of the apples. Mine stayed at the top. I also added a few drops of almond extract to the batter.

Just popping in to thank grainlady for posting the PB cookies recipe! I just tried it and love the result. I added an additional 1/4c brown sugar and only used peanuts as add-ins... mine aren't crunchy, but they're very good! :)
