What's for Dinner, Christmas Eve??

Today was bitterly cold and sunny. Going down to -16C (3 F) The wind chill will make it feel a lot colder.

Hubby made 2 pots of chili today.....one that he likes with the kidney beans, etc in the slow cooker. The other kind I like.....no beans, but jalapenos, cumin, cayenne.....a Southwest flavour, simmered on the stove.

I made scalloped potatoes, some pan fried pork chops and a quick steamed broccoli with lemon juice and garlic.

Dinner will be pizza...
I think just pepperoni and cheese.

Ditto! This is the recipe that I'm using this year. It was a hit the 2 other times that I made it! Beef Tenderloin With Roasted Shallots **** Submitted by: Christine L. Rated: 5 out of 5 by 328 members Prep Time: 15 Minutes Cook Time: 1 Hour 30 Minutes Ready In: 1 Hour 45 Minutes Yields: 6 servings "This tenderloin roast makes a good company dinner, It is similar to Beef Bourgignon, but requires considerably less cooking time. Roasted shallots are added to the sauce along with sauteed bacon bits. The recipe serves 6 and can be doubled." INGREDIENTS: 3/4 pound shallots, halved lengthwise and peeled 1 1/2 tablespoons olive oil salt and pepper to taste 3 cups beef broth (two 14oz cans) 3/4 cup port wine (used more) 1 1/2 teaspoons tomato paste (maybe more) 2 pounds beef tenderloin roast, Trimmed (I used 4 lbs for 9 people) not too chilled! 1 teaspoon dried thyme (didnÂt use) 3 slices bacon, diced (used two) 3 tablespoons butter (used less) 1 tablespoon all-purpose flour 4 sprigs watercress, for garnish DIRECTIONS: 1. Preheat oven to 375 degrees F (190 degrees C). In 9 inch pie pan, toss shallots with oil to coat. Season with salt and pepper. Roast until shallots are deep brown and very tender, stirring occasionally, about 30 minutes. 2. In a large saucepan, combine beef broth and port. Bring to a boil. Cook over high heat until the volume is reduced by half, about 30 minutes. Whisk in tomato paste. Set aside. 3. Pat beef dry; sprinkle with salt and pepper. In a large roasting pan, set over medium heat on the stove top, saute bacon until golden. Using a slotted spoon, transfer bacon to paper towels. Add beef to pan; brown on all sides over medium high heat, about 7 minutes. LET MEAT REST FOR A BIT AND COOL DOWN BEFORE COOKING IN OVEN!! 4. Transfer pan to oven. Roast beef until meat thermometer inserted into center registers 125 degrees F (50 degrees C) for medium rare, about 25 minutes. Transfer beef to platter. Tent loosely with foil. 5. Spoon fat off top of pan drippings in roasting pan. Place pan over high heat on stove top. Add broth mixture, and bring to boil; stir to scrape up any browned bits. Transfer to a medium saucepan, and bring to simmer. Mix 1 1/2 tablespoon butter and flour in small bowl to form smooth paste; whisk into broth mixture, and simmer until sauce thickens. Whisk in remaining butter. Stir in roasted shallots and reserved bacon. Season with salt and pepper. 6. Cut beef into 1/2 inch thick slices. Spoon some sauce over, and garnish with watercress. A hot dog I found in the freezer, wrapped in foil since..? Tasted good tho. That's about all, not counting all the cookies I made plus all the cookies and candy friends and neighbors have dropped off. Just got back from Christmas Eve service at the church, and I'm sure I'll start picking through the plates of goodies again. Ooo, hash with poached eggs - one of my favorites. Wish I had some for my breakfast tomorrow. All by myself Christmas Day as we had the family dinner at my brother's today at noon; but I have a big slice of ham to cook tomorrow for my dinner, some dressing, sweet pot., and probably corn.

Our 'out-laws' (DIL's parents) have a traditional Polish Christmas Vigil meal on Christmas Eve. Last night there were twenty of us at table. Champagne is served before dinner. Then there is a sharing of wafers where each person greets every other person attending, eating bits of one another's wafers. The purpose is to mend any old year's discords and wish good things for the coming year. The table is set with the best china, silver and crystal. There is straw under the white tablecloth to evoke the manger in the stable. DIL's father reads from the Bible -- and this year recounted his first nativity play, where he played the ass! Then the meal begins with homemade soup made from imported Polish mushrooms. (Evidently becoming scarce.) Salmon has been a welcome addition to dinner in recent years. The rest of the meal is varieties of pirogi and cooked cabbage. After dinner there is an enormous sweets table with homemade cakes, cookies and candy. (DGS pointed out the six kinds of cookies and the caramels he had helped his mom make. Doubly delicious!) When the children can't stand it another second, the mound presents under the tree is attacked! Towards the end of that, carols are sung in English and in Polish. DH and I drive home while some of the family goes on to mass. (DH and I are not Catholic -- which becomes more 'OK' with passing years. It's nice to visit with DIL's big, extended family.) Today is bright and sunny near Lake Michigan's shores. I see walkers, joggers, and dog walkers passing along our street already. DH and I have had our breakfast -- with the stollen I *finally* found! Christmas Eve is our big family gathering, we include a dinner for 20. We serve buffet style, but sit at dining tables. (I discovered that 20 is the perfect number: 10 at the DR, 10 in the sunroom at two folding banquet tables) We went with a simple dinner menu this year: beef tenderloin, mashed potatoes (two trays from costco, they were great, and pretty in my new red-orange Dansk pan) and a simple Chistmas salad my aunt made. Elegant! Appetizers were made/brought by others: just shrimp w/sauce, an artichoke dip with crackers, and my kids always make the classic Lipton soup dip. Dessert was the most complicated: DH made his mom's Walnut glory cake which calls for 9 count'em 9 separated eggs. But it's not called "glory" for nothing! Our Scandinavian tradition calls for rice pudding which, for the first time, came from my kitchen. It was a tad soupy, but delicious. And folks brought cookies and candy. Christmas morning DH made our traditional "Eggs McDH" and mimosas. We forgot to make the fruit medley, but that's okay. Then we went to my folks' and my brothers met us up there, for baked French toast (made with Challah, best French toast ever!) and bacon. Christmas night is our quiet intimate dinner at home of leftovers, at the dining room table with the party dinnerware. Me, I felt like the Very Hungry Caterpillar: I ate "one nice green leaf and felt much better". Literally, I had the salad with no dressing lol! Ahhh.

We had grilled fish sandwiches from Hardee's. Not my favorite, did not have any flavor to it.

We usually have fish chowder for Christmas eve. I made it but decided to save it for Thursday night and share it with DS who isn't arriving until tomorrow. All I have to do is throw in the fish and some sherry and we're set to go. We had spaghetti and meatballs tonight.

Ham, turkey and cornbread dressing with giblet gravy, corn casserole, green beans, mustard greens, rolls, coconut pie, pecan pie, and chocolate cheese cake. I fed 16 tonight for our family Christmas eve dinner.Also for munching Ro-tel dip and a seafood dip with frito chips.

We had seafood bisque casserole with warm French bread and a spinach salad. The dish is so rich nothing else was needed except for some Christmas cookies later on.

This Christmas Eve, instead of having the traditional Italian Feast of Seven Fishes, we had the Feast of Philly Cheese Steaks!

We joined friends for dinner at a local Italian restaurant owned by friends/neighbors. We gave out mini bottles of homemade limoncello, which was well received!

We were at the home of our DIL's parents in the city for their annual Vigil Dinner of Polish mushroom soup, creamed herring on black bread, pierogi's (three varieties), mashed potatoes, cabbage -- and, thankfully, salmon.

We were twenty-some at table including four grandkids ages two to nine and one who is 17. Too many cookies and candies on the sweet table to list them all. Sarted at five with champagne, then the wafers, dinner, carols in English and Polish, and a mad opening of gifts. Home in bed by 10:30.

DGD was in love with her play guitar and microphone, and DGS was hopping up and down over his giant new Lego set. (Guess we did OK.) DGD set up the mike on its floor stand and informed the gathering, "I'm the singer." DGS and his year-older cousin roamed the house trying out their walkie-talkies. It was a very nice "zoo".

In the Polish tradition of having a meatless Christmas eve meal, we had liniguini with clam sauce, broccoli and a salad.

We had tilapia filets, fried potatoes and broccoli. We also follow the meatless tradition on Christmas Eve! Today we go to our daughter's for turkey with all the trimmings. I am bringing pierogies! Not something you usually serve with a turkey but everyone loves them!

jasdip - I am guessing your power came back on didn't go off. Ours was out for 55 hours. Came back yesterday afternoon so I had to go to the store and try to find food - we lost most of ours - and so many of the traffic lights were out and roads blocked by fallen trees. The horror stories in the grocery store lineups were wild. Fortunately I had a good supply of red wine. I was thinking I should buy a fondue pot - haven't had one since the 1970s but I know people used them - people who had kept them in the basement. We don't have a barbeque - not a chance my husband is going near propane. Now a nice battery operated pot would be nice! Your chili sounds great.

My brother lives in Thornhill and his hydro didn't go out. I know North York and Scarborough were out, and might still be.

Ours was off all day Sunday, from 7:30 to 5:30.

There's a thing going around about tea lights and clay flower pots creating heat for a small room. I keep forgetting to buy some tea lights to try it.

Basically 3 tea lights in a loaf pan, a small clay pot with the hole plugged inverted, and a larger clay pot inverted over that. It creates a fireplace effect with air circulating to heat a very small room.

IF it works, it would be great for people without hydro.

I made oyster stew with fresh oysters. Yummy. It is a Christmas Eve tradition.
