Well, you're going to think that all we eat are sausages in red sauce. It's a great fix when I forget to take something out of the freezer; plus DH specifically requested it. I had a bit of salsa in the jar in the frig and put that in the sauce.

I put potatoes in the microwave and baked them, with frozen corn.

Eating ice cream and butter tart squares for dessert.

I'm trying a new recipe. Avocado pesto pasta. Looks yummy and healthy.

We're having chicken pot pie. I'm playing around with the recipe because I want to make it for my golf luncheon and one of the ladies is going gluten free. I wanted to do a trial run.

Georgysmom, I'd love to have the recipe for the pot pie. Harry's daughter and family usually come for a week in the spring and she's gluten free. It's really hard to make a meal without using flour of some kind (plus, she's sugar free and lactose free--and all on her own accord). But I do try to make meals she will like. I guess you'll have to thicken the pot pie with cornstarch??? I usually just serve a chicken salad :0

The youth center in our town had a fund raiser supper. Local Kiwanas served Chili,baked potato with all the toppings you wanted, and a bread stick. No dishes tonight! ;)

I took turkey out of the freezer and made a GINORMOUS pot pie...feeds 6!

When we were in the Galveston area a couple of weeks ago MarilynC (possum Lady) cooked for us one night. She made us some shrimp gumbo, rice and shrimp coleslaw. There was some gumbo leftover so I froze it and today added some more shrimp and okra. It sure is tasty.

Tonight was creamed dried beef over whole wheat toast and green beans.

Nodakgal, that's the best kind of dinner plus you're helping the kids! Although I do have to say that Harry cleans up after dinner. Well, sort of. I clean as I go and put all the leftovers away.

Nicole, that pot pie is too pretty to eat and, you are right, it is huge!

It's cold cold cold out, and I was in need of comfort food. Hamburger gravy over biscuits, just waiting on the biscuits to get done....

Patti, yes, I thickened it with cornstarch and on the one, I topped with thinly sliced potatoes that I had slightly crisped in the oven first and then put it back in the oven to bake for 15 min. I thought maybe the potatoes got too crispy. I might try it with a topping of mashed potatoes instead. I don't think I liked it thickened with cornstarch as well as I do with the roux. If I make that, I think I will just pull out one serving and thicken hers with the cornstarch rather than compromise the whole dish. Then again, I'm thinking about switching to Sweet and Sour Pork instead. LOL

A big pot of Vegetable Beef Soup that simmered in the crockpot all day, salad and crusty bread. It was perfect for the cold desert night in Phoenix.
